Bademjan Polo (Eggplant Rice) - Cooking with Yousef

  • Hi Friends, today we make "Bademjan Polo" (بادمجون پلو) which is "Eggplant Rice" or "Aubergine Rice" depending on where you live.
    This shares some similarity to Tahchin Morgh, but this is not a cake style dish so you don't have to worry about flipping the pot into a perfect tahdig, although I like to serve it in that style.
    This is my preferred way to make this dish, as you will variations on how to make this dish, but this method is very tasty, delicious & my family loves it.
    We also had a little technical difficulty, so I added a small voice over and text, that was fun!

    Ingredients:
    - 500 grams / half kilogram Beef Stew
    - One Lamb Shanks (bones removed when mixed with rice)
    - 3 Cups of Rice
    - 2 Big Eggplants (5 small one)
    - 2 Tomatoes
    - 1 Onion
    - 1 Lime or Lemon * (forgot this till later in the video)
    - 1 Teaspoon Salt
    - 1 Teaspoon Black Pepper
    - 3/4 Teaspoon Spoon Turmeric
    - 1/2 Teaspoon Garlic Powder
    - Liquid Saffron
    - Cooking Oil

    All the goodness of the eggplant is in its skin. It is full of vitamins anti-oxidant which prevent cancer.

    Amazing!! How could it not be tasty 😋 Similar way of layering like Biryani. Many thinks Biryani is from India but actually this dish is originated from Persia ( if not mistaken from Esfahan? )

    Hello Yousef, I made Bademjan Polo same as in your video and it is amazingly good.
    the bottom turned crispy and the rest is fluffy and tasty. Thank you, and keep making videos.
    maybe you can make a video of "Gondy" balls with it's soop?

    Dear Yousef, Farsi for Eggplant is Badenjoon (with 2 Ns), not "Bademjoon", ask a Farsi college instructor at a State University, if still in doubt!! And if you want the real formal version, then it's Badenjan, but No one would pronounce it that way in everyday speech!! My father had his major in Farsi literature with a minor in ancient Persian history, later he went back and received a law degree from University of TEHRAN. And after that he got his graduate degrees in Criminal Justice, from Melli University during the last King's regime. Thanks for trying your best. And I myself attended Alborz High School, and if one could not register in 7th grade, then they'd have to be tested for all Science and Math courses (usually more difficult than most university entry exam)!!     How much salt in the rice 😳😳 you were very heavy handed, weren't you ?? Must be too salty. Otherwise looks yummy.
