Khoresh Bademjan | Eggplant + Tomatoes = Wonderful Combination for a Delicious Stew

Bademjan = Eggplant
This stew is a favorite among many Iranians. Be careful not to overeat. It's really hard to not do that with this stew.
Also if you don't have access to verjuice (ab ghooreh), you can use lemon instead.
~ Ingredients ~
1/4 cup olive oil
1.5 lbs stew meat
1.5 tsp salt
1 tsp turmeric
1/2 tsp black pepper
5-6 tomatoes on the vine
1 medium red onion
1 can tomato paste (8 tbsp)
1/2 cup verjuice (ab ghooreh) (Sour Grape Juice)
2-4 cups water (depending on how soupy you want it to be)
