They take very little prep, most are fairly healthy, and they’re a great way to use up those fresh veggies that are on their last leg. with small potatoes, I have been making the best tasting this summer: smash the small potatoes (on a board with the back of a glass), then put in a pan...then drizzle with a good olive oil and juice from one fresh lemon; then sprinkle with dried dill--and back for 30 mins in the oven at 350...so, so good--better than potato chips--honestly...you cannot stop eating them (if you like the lemon taste)...dts/usa

You are so cute and entertaining. Thanks for all you recipes. We don’t eat fish or shell fish but lots of chicken/ground beef. We eat out about twice a month with friends, I’ve told them all about you. Have not as yet prepared any of you suggestions, but I will. But sure LOVE watching you. I’m 78 years old, with heath problems, but have not and will not loose my since of humor, or my place in the kitchen. You are helping me with that too. God Bless Dear and keep up good work.

My husband n son like legs! So I make green beans, chicken legs, carrots, potatoes , onions n 2 whole jalapeño! Sprinkle with oil n cube veggies! I leave green beans whole or cut in half! Sprinkle chicken with bbq rub seasoning n the rest with fajita seasoning which is like Aunty Nono! Bake about 20 min n turn chicken n put seasoning on that side! Place thin pats of butter over veggies n return to bake 10 min! We place chicken around edges and add all veggies but beans! Then place beans on top! We all love it!

I make sheet pan meals often. Love veggies especially with a little char. When camping i just put everything in aluminum foil and put it over hot coals. Yummy

Hey Mel, I remembered I saw on Cooks Country on PBS the trick for albumin free salmon - brine it in 2 Qts water with 5 Tbsp Salt for 15 mins before baking, then bake low & slow and the brine helps it stay moist & no white stuff comes out! It looks absolutely delish but I'm with u, I would not be eating fish skins! The recipe that blew my mind most was #2 & the Pnocci - I had no idea u could ever cook it that way!
Actually, I never saw any sheet pan demos, lots of recipes but it seemed complex so I never tried. It's gonna be a delightful addition to my recipe collection!! Thanks ever so much! 🙋♀️💕

We have a big patch of asparagus in our garden, fresh garlic and new potatoes and we cook it with steak! Oh my it’s good!!! ❤❤I love Salmon but my hubby doesn’t!

Delicious and healthy and great meal ideas! I line my pans with parchment to reduce sticky cleanIng; also put sliced veggies in a bowl and add zesty Italian dressing, salt n pepper, garlic powder olive oil and butter mix and pour onto parchment; i sear my chicken in oil briefly after marinating, then add to the sheet pan...sheet pan meals are great!

I have been cooking salmon for years,and ask the cook at O Charles what I was doing wrong. He told me I was over cooking it . 12 to 15 minutes depending on your oven. Yours looked very good.
I absolutely love sheet pan dinners! The easiest and tastiest is with the smoked sausage and it is so easy! I cut up whatever veggies we have (usually squash, zucchini, and onion - sometimes broccoli and cauliflower, too). Cut into bite size pieces... put all in a bowl and drizzle with oil and auntie nono's and mix well, put on sheet pan with the sausage cut up into bite size pieces. Bake at 375 for 20 minutes (flipping them half through).. and voila! Done!
Also, I recommend using canned salmon to make fritters... just like tuna fritters, but with salmon... OMG!!! So good!

Yay! More delicious sheet pan recipes. Thank you, Mel. I must comment on salmon skin. I love, love it. Probably best when fried with the skin crispy, with thick layer of the 'good' fats. But I love it anyhow it's cooked. So glad my husband hates it, so it's a tussle between me and Jack [the cat], who gets the most. haha. Also, don't worry about the 'white stuff'. Just flip it near the end of cooking, then flip it back. All should be good. from Oz

This is a long time favorite salmon recipe that is super easy(10 minutes prep / 30 min. Bake) to make and so good we have it for Christmas dinner or whenever. Look up Salmon Greyer.
~puff pastry, salmon, S+P, greyer cheese, spinach, onion and brush a egg wash over the puff pastry to make it a beautiful golden brown color.

Miss. Mel, if you like asparagus….TRY THIS APPETIZER!!!!
Spread cream cheese on a nice sliced ham (I love Fricks!).
Lay 3 stalks of cooked asparagus on top of the cream cheese.
Roll up, chill and slice into bite~size pieces. (The cross~section will look like Mickey Mouse.)

Hi Miss Mel-I’m a new subscriber from Michigan! I love your bubble-up bakes, so I’m going to try these sheet pan meals. Just for your reference, at 400 degrees you only need to cook Salmon for 10-11 minutes. It should still be moist inside between the flaky layers, with very little to no Albumin coating it. But you did GREAT for your first time!! Thank you for all the cooking you do Miss Mel!!

I think I will make all of them. When making potatoes microwave for a few minutes and then put them on your sheet pan or on grill or skillet. It will make your life easier.

I'm a big fan of one dish meals, and oven or crockpot meals are the best. Plan to make the chicken with sauce and the salmon ones. I'm with you on the sausage. My husband loves it, so I make it for him sometimes.
