I'm definitely in a dinner rut. My husband and I eat out a lot because it seems like our 17 yr old daughter is either not in the mood for what I am cooking or she goes out with her friends and hangs out around dinner time. So with 2/3 of us in the home I will definitely be making these possibly downsizing the recipes. Everyone looks great and I have a lot of the ingredients on hand! We make something similar to the tortellini casserole. We don’t bother to cook the tortellini ahead of time & it turns out beautifully. Save yourself that step & the cleanup that goes along with it. These recipes look like real family pleasers!

Jennifer, the mushroom with roasted garlic is really good with a beef pot or a pork roasts. I made fried rice last week except I used shrimp. It was so good.

I've noticed that you use quite a bit of rotisserie chicken. Do you buy more than one per week? How do you process them when you get home? I just love your videos!!
I usually just buy one and stretch it over 2 meals. I’ll pick it off the bone and store in an air right container, but I always use it within the day or the next!
I buy 2-3 at a time Pull all the meat off the bones, chop into bite size pieces and put approximately 2 cups per ziplock freezer bags, label and lay flat to freeze. It’s so nice to have to throw in a casserole, salad or soup for quick meals. Then if you want you can cook the bones to make chicken stock to can

I wish that exact amounts of ingredients would be given more consistently, for example with Shirley’s Chicken Casserole, you said a carton of sour cream but without seeing the container, it’s hard to know if that’s an 8oz carton or larger. The rice dish, i have been making that for years, but i add 1 pound of cooked hambuger. , also I use minute rice, I served it with Mash potatoes, and green beans.
You can make a meal out of the stick of butter rice. I put chicken breasts or pork chops on top and cook it on 350 for 1 hour. It’s so easy and sooo good.

Make the stick of butter rice without the butter. It's delicious and not as greasy or fattening. It really is just as goid.

I have used cream of bacon soup and don't feel the need for cream cheese. My hubby thought the creamy bacon potato soup tasted better the second time.
