Your bowls are lovely. However, I have learned to do this plant-based thing so much differently after this summer. We’ve been building a tiny cabin, living on our property in a tent. It was the hottest summer on record here with temps about 20-30 degrees above normal. We had no refrigerator. I learned that even in extreme temps, fruits and veggies stay fairly fresh for 3-7 days. I go to the farmer’s market on w and sa, buying enough lettuce, beets, tomatoes, eggplant, cabbage, zucchini, kale, onions, garlic, and whatever other fruits and veg in season. I store them in the shade in a basket lightly covered with a cotton cloth. All meals are quick and simple, cooked over a propain camp stove or in a solar oven. Even now, I prefer to cook dried beans in the solar oven as they taste that much better. Even in my little camp kitchen I like to make hand rolled pasta and skillet bread with freshly ground wheat flour, too. Now that I’ve discovered the over rating of them, I may not even put in a fridge after this experience. There are many ways and many roads along this plant based journey. I’ve been eating something similar to the first bowl non-stop for the past few weeks: Arugula, Spinach, Black Beans (or any kind of beans, I’ve tried kidney and white beans), Brown Rice (I make a quinoa-brown rice medley, this week I batch prepped some with wild rice also in a 1:1:1 ratio), fresh habernero, and the habernero-carrot sauce from Whole Foods for my dressing. I add some truffle salt I got from Amazon (I have low sodium so I try to season my food). I chop up the arugula and spinach so every bite is perfection!
Most definitely the white bean bowl only because I have a smidge of white beans left and wasn’t sure what to do with them. :-) Thanks so much for posting UA-cam’s I love to watch them.

I’ve loved your suggestions of just cooking rice yourself and freezing it and then you can reheat and add to whatever you need. You are inspiring! The last one as it is cold here. But can’t wait to try your dressing in 1st one. I have found a veggie &bean mix in freezer at Kroger and that is super easy to grab and throw in with prepared rice with soy sauce and red pepper flakes, yum! Love your sharing
They all look delicious. I am still the only one plant based. I cook for 3 others who are not. Good news they have all lost atleast 20 lbs or more. Because I cook them a lot more veggies and fruits. I even make homemade dog food for my dogs hoping they will get healthier. Thanks for your videos
