  • Today I am sharing a day of eating as a vegan who is in weight loss mode. I eat a vegan, whole food plant based diet with my meals centered around high starch, and low fat and following the general ideas of Dr. John McDougall and his book, The Starch Solution. I hope you enjoy my "What I Eat In A Day" video.

I love sharing these what I eat in a day videos with you because I feel like it gives you a better insight as to how someone who is on a vegan weight loss journey eats to achieve their goals. Eating a whole food plant based diet is an amazing and healthy way to eat, but sometimes weight loss is still hard to achieve. That's why I decided to follow the general guidelines of Dr. McDougall's The Starch Solution, which is a higher starch, high carb, low fat vegan plant based diet, allowing one to fill their stomach with food, stay satisfied until their next meal.

Food hack: (if you have the time/space) spread the food out on a sheet pan (pepper slices, berries, etc) and freeze them till the surface moisture is frozen, then bag 'em up and put them back in the freezer. this prevents the frozen brick thing going on :)

If you first freeze your peppers in a single layer on a foil or parchment lined baking sheet, you can later transfer them to a glass storage container or zip lock bag and they won’t clump together. We grow peppers every year and that is how I freeze them. The ramen soup look delish! 🫑

Love this kind of video! Growing up in NJ we always called the last meal of the day dinner. Here in northern Vermont most people call it supper. Back in the day, their biggest meal was at noontime or there about, and they called that dinner. Then what they ate at the end of the day was a lighter meal called supper. Nowadays out of habit or what their relatives had always called it, their last meal is supper. I hope that makes sense!

Ditto Robyn. My sweet momma was a 30+ year HomeEc teacher with a Master's from "Southern Miss". She taught me that the largest meal was dinner. So if we ate big at noon and small at 6 we had breakfast dinner and supper. But that was a different era. New to your channel Tia and appreciate all you are teaching this "old" dog.

My parents were brought up in rural(ish) iowa, and dinner was always in the middle of the day and supper was in the evening. I'm told that city people eat lunch at noon and dinner in the evening. But as times have changed, I think lunch and supper have pretty much take over and "dinner" is either a big celebratory meal or when you go out. At least that's how I teach my ESL students to go!

Growing up, if it was on the table by 5 or 6 it was supper. After 7PM, Sunday at 2pm, Thanksgiving and Christmas, it was dinner 😂

It’s dinner to me, but my husband, who is from lower AL, calls it supper ☺️. Love your recipes and love your channel!

Your chickpea recipe is delicious, and I don't generally like the texture of chickpeas. I did add some garlic/onion powder, a little curry paste, and salt and pepper for a little more pizazz...this is going to be my new go-to meal! Thank you Tia! Love your inspiration!

Great video! I’ve been wondering what to do with my frozen cherries lately. I’ll have to add it to my oatmeal next time. If you ever want to avoid dirtying extra pans, try making your oatmeal in a mason jar next time. You literally out the oatmeal in, pour the hot liquid, close the lid and a minute later you have hot oatmeal. It works with regular oats (doesn’t need to be fast cooking oats). Perfect on the Road!

I love watching your videos! They are so inspiring and your food creations are incredible! I have been doing plant based for a few months now and love every aspect of it, but one thing I struggle with is how to organize a grocery list for the week. I end up buying a ton of vegetables with no thoughts on what to do with them, even though they look delicious to me, sometimes they end up going bad because I didn't have a plan for them. How can I make the most of my grocery shopping for the week without wasting any food?

You need to buy grocery based off of you pantry inventory, but off of recipes. I know it sounds backwards, if it’s life saving. I have an entire chapter related to this in my new book called Simple Vegan Mama. I also have a video on my pantry as well. Have you seen that one?

We've always called the evening meal "dinner". I have known many people who live in the same area say supper, too, though. 🙂

How much rice do you put in for a single serving? Did you use the whole can of chickpeas? I made your peaches and cream to pour over my oats today (another video) and it was so good!

I love your pot you cook your oatmeal in. Looks like Le Cruset? If so can you share where you buy it? I think I heard you say you are a bargain shopper so just curious and I would like to start cooking in this type of cookware and need a good price..lol! Thank you Tia!
