I like to batch cook my brown rice and freeze it in flat ziplocks, then I can break off parts to add to veggie dishes. I also toast the brown rice before I boil it.

This was absolutely delicious!! I had my doubts about the cashew dressing but that was my favorite part! Next time, I'll switch out the rice for cauliflower rice and add in some tempeh or tofu or pork to add in some protein. This was sooooooo good!

Just wanted to drop by and say I love this recipe, even though I've taken some liberties with it. Thanks for introducing me to purple yams. So good! I make it at least once a week now. Its quick, easy and cheap and you don't feel guilty after eating it. I'm not making the tahini sauce, because I don't have tahini lying around. I tried to sub it out the first time I made this and it... did not go well. But I'm just using some Panera dressing in its place and it makes the dish so much easier and quicker to whip up. Thanks! Looking forward to your pumpkin ramen when I get a chance to pick up a pumpkin.
Looks fabulous! 😍 The mixture of raw and cooked elements with their different textures, and the use of brown rice (so flavoursome and nutritious) makes for a veritable feast! I'd eat this (with perhaps the odd tweak depending on what I have on hand) seven nights a week 😊
