    LEARN HOW TO MAKE THE MOST AMAZING CHINESE HOT POT RECIPE EXPERIENCE AT HOME!
    LAY HO MA (how's it going in Cantonese)! This episode is close to the heart and it's perhaps not so much an exact recipe as it is an experience. Join me in this episode and enjoy some amazing Chinese style Hot Pot!
    LIGHT BROTH INGREDIENTS:
    1 large daikon/lo bok
    2 carrots
    medium piece ginger
    3 sticks green onion
    10 dried shiitakes
    4L water
    1 tbsp salt
    LIGHT BROTH DIRECTIONS:
    1. Peel and chop the daikon into medium sized cubes, roughly chop the carrots, slice the ginger, and roughly chop the green onions
    2. Add all of the light broth ingredients to a large stockpot and bring to a boil. Then, simmer on medium for about 1hr
    SPICY BROTH INGREDIENTS:
    1 1/2 cups water
    1 cup dried red chilies
    1-2 tbsp Sichuan peppercorns
    1 tsp fennel seeds
    1 tsp coriander seeds
    1 tsp ground cloves
    1 tsp cinnamon
    1 tsp cane sugar
    4 pieces garlic
    medium piece ginger
    3 sticks green onion
    2 cups avocado oil
    1/4 cup doubanjiang
    1/4 cup black bean paste
    SPICY BROTH DIRECTIONS:
    1. In a small saucepan, add the water and dried red chilies. Then, bring to a boil and let it cook for a few minutes
    2. Transfer the chilies to the blender along with a couple splashes of water. Blend on medium high and set aside
    3. Heat the saucepan to medium heat and add the Sichuan peppercorns, fennel seeds, and coriander seeds. Toast for a few minutes, then set aside. Add the ground cloves, cinnamon, and cane sugar to the toasted spices
    4. Roughly chop the garlic, ginger, and green onions. Then, add them into the saucepan along with the avocado oil. Bring to medium heat and cook for 5-7mins
    5. Carefully add the doubanjiang, black bean paste, toasted spices, as well as the blended chilies. Cook for another 5-7mins on medium heat stirring occasionally
    6. Turn the heat off and let the oil cool for a few minutes. Then, carefully transfer to the blender and blend on medium high for a few seconds. Use right away of store in the fridge for later use (this broth base is good for about 3-4 Hot Pots)
    7. When ready to use, simply dissolve about 1/3 cup of this spicy broth base to 4-5 cups of the light broth and bring to a boil. Throw some extra whole dried chilies in there for good measure!
    DIPPING SAUCE INGREDIENTS:
    2 tbsp soy sauce
    2 tbsp chili oil ( • Most addictive Red Chi... )
    2 tsp black vinegar
    some green onions
    1 piece garlic
    small piece ginger
    1 tbsp avocado oil
    splash of toasted sesame oil
    pinch of salt
    DIPPING SAUCE DIRECTIONS:
    1. Combine the soy sauce, chili oil, black vinegar, and green onions for one sauce. Grate the garlic and ginger and mix together with the avocado oil, toasted sesame oil, and some salt for the second dipping sauce

      We just recently purchased a dual hot pot so we can make it at home. 😋 I luckily already had a burner, so I just needed the two sided pot. I've started collecting the shelf stable ingredients I need, and then we're going to 99Ranch (Asian market) this weekend to buy the fresh ingredients. I promised my spouse I'd make it as a holiday meal, because he loves it so much, and we always have had to wait until we had time to go out to have it. 😂
      It's a great meal to bond with family and friends 🥰😋💜

    I don’t recall how I found you a few years back. But it was so thrilling because it’s still so hard to find shows/chefs that cook only vegetarian Asian cuisine! Easy to find other cuisines but not the ones shown by you!! I hoe to try a few dishes with my family this holiday season. We plan to remake the hot chili oil of course. Your clear, no bs teaching with a calm voice, no chit chat is very appealing to me. Continue to grow and prosper in all you do. Wishing you the best of health happiness and success ahead!     Food is always such an adventure on this channel, Wil! This does look like the most amazing recipe to have with friends and family. I must find an occasion to gather them and try it. The spicy side looks just a little terrifyingly hot to me (I have what Nisha on Rainbow Plant Life calls "babymouth"!), but I bet it's delicious too.

    I am so curious to try hot pot! I went to a Chinese restaurant here in Italy where they serve hot pot, but they didn't have any vegan option 😞 I will have to cook my own, but thanks to you now I feel definitely more confident in doing so!

    At around 10:12 into this video, I love what Wil says about the most important recipe of the year😔...it is a very thoughtful and very a meaningful comment. And of course this ended up being another great recipe too.
    I am binge watching his videos in my efforts to get ready for Chinese New Year. And because Wil has so many "Perfect" recipes, planning the foods that I'll include has been difficult but definitely fun too.

    Years ago, my first few years after uni and into work, number of us co-workers got together to do fondue style potluck dinners; cheese, oil and chocolate. I introduced the hot pot, it was well received. So much fun and delicious food.

    Hey love your videos I just wanted to add some info as a professional chef who deals with food safety every day. Broth does definetly not last for multiple weeks in the fridge. Broth is one of the things in the kitchen that goes bad the quickest as it is just water full of nutrients, basically ideal conditions for bacteria to growth. 3-4 days is as far as you should go with keeping a broth in the fridge, if it's gonna be any longer you should freeze it. Also if it's not gonna be consumed it needs to be cooled down fast, at best divided so it doesn't retain as much heat.

    Your timing is perfect Will! I have an antique Mongolian Fire Pot that's been in storage for a long time. I'm about to move and that baby is coming out to play. It's old enough so the cooking source is wood or charcoal. I have to learn how to use it but it's going to be fun. Thank you for this. This looks fantastic! ❤❤❤

    I've done hotpot at home with family and friends at least 40 times, but we've always just used some store-bought broth mixture. You've inspired me to make the broth from scratch the next time (which should be in a few weeks).

    I agree that eating together is one of the best things in life. And hot pot definitely works for that. I will be making this for a family get together in mid January. It will be a lot of fun to introduce them to hot pot. 😊

    We ❤ Hot Pot!
    I got to know Hot Pot during my time at university and I instantly fell in love with this dish. Over the past years I even managed to get my friends and my elderly parents hooked on Hot Pot. Rarely goes a week by now without any Hot Pot 😂
    We even had Hot Pot at a restaurant in London (UK) during our summer holidays. It was a life changing experience! 😍
