In college I had a roommate from Beijing and we made hot pot once a week. It's been 10 years and I still make it for my family. It's definitely one of my favorite dishes she taught me.
Are the hot pot appliances expensive?

@@2degucitas not at all. I have an electric induction hot plate that came with the pot. It cost maybe $30-40. You can also make hot pot in a regular pot on your stove if you don't want to buy the extra materials.
You could cook a batch of food on the stove, move the pot to the table and have everyone scoop out what they want into their own bowl, then add the next batch of food to the pot and put it back on the stove to cook while everyone eats the first batch.
@@2degucitas oh another option (and this was actually what my roommate and I did when we were in college) was we cooked hot pot out of a rice cooker.

My fave part of the hotpot experience is the soup you're left with at the end. All the flavor and fat from the meat and other ingredients plus the constant reduction leave you with a soup that is divine and a perfect end to the meal.

For the dipping sauce: in my family our favorite is Chinese sesame paste (different to tahini as it’s toasted and thicker), sacha sauce, one cube of fermented bean curd or known as Chinese cheese, and some chili either from the base or chili oil, and cilantro and scallion! This is really good though, definitely approved Josh 👍🏻
My family also likes adding some chinese black vineger and garlive chive blossom sauce (specifically for lamb) into the sauce, absolutely delicious!
Here's my family dipping sauce (I think everyone has one )
chop thinly leeks (preferably the white part )
Put it in the bowl with some soy sauce add a little sugar and then put hot oil all over it .
It's a very simple dipping sauce but a really good one :)

As Chinese we have 4-5 different types of hot pot. There is charcoal based lamps hotpot with salty sesame past as dip, in South we also have plain soup based all beef (fresh cut, different part) hotpot with Sacha dip, Joshua made is more a Sichuan style which is also popular in most of China. There is another coconut chicken soup based hotpot also light. There are all fish hot pot etc. maybe only popular in certain area of China but delisious

@@support_theory8754 四川火锅/重庆火锅 Sichuan/Chongqing hotpot(the most common one, spicy and oily), 老北京铜锅涮肉 Beijing hotpot(the pot is different from Sichuan one, this version is not spicy) 云南野生菌火锅 Yunnan mushroom hotpot(not spicy, and many mushrooms in it) 猪肚鸡火锅 I'm not sure about this one's English name, but it has pork belly&chicken in it with peppers. And many others, but I think those are not that famous outside of China(For example: 三鲜火锅, 什锦火锅, 八生火锅 and so on)
Coming from someone who's Taiwanese, I think this video is AWESOME. Super authentic ingredients and methods and even though it's definitely a bit more complicated than what my family would normally do at home, I have so much respect for how thoughtfully you prepare everything! Inspirational (:
Joshua literally just flexing over here. I'm a chef aswell and unless I'm in a professional kitchen at work, there's no way I'll be doing this at home. That being said, love the "from scratch" mentality and all the work he puts out for us. Keep em coming 🙌
Funny cuz in China, it's like the most convenient family dinner you can make at home. The base looks like a hassle, but in the fridge, it keeps for ages. So it's like making pickles or something. Once you have a big jar or it in the fridge, dinner is just wash and cut yer veggies and meat, add a scoop of the base, and set up a coffee table with a hot plate in front of the TV.
I personally like knowing how the thing is made from scratch because you can then begin to figure out good shortcuts.
Josh please start filming your crew eating the food you just made. I feel like that’s content.

Me, a Chinese person who eats hot pot every weekend in winter: throws in a can of chicken stock and water as the non spicy base.
Also, a real hot pot fanatic would never eat rice during hot pot… it’s just a waste of stomach space. Haha.

Same here. Went to China, we had 10 different hot pots at restaurants. Never ever I saw somebody have rice with it. And we had a table topped with a lot of different ingredient from which we could make our own dipping sauce. This sauce is combined with some of the broth from the hot pot itself. This is quite important I think personally. Also one of the best thing to add is yuba or mushrooms, because of squishy textures will swallow even more the flavours of the broth. Also you can finish it by poaching an egg into it!

Update: okay so he did the broth by himself which is A+ for effort bc we don't even do that! We just buy the base in a block/sauce form and cook it. However, he did add some twists that are not necessarily that authentic (e.g. mushroom powder). Food wise he's got cabbage and beef, but I wish he'd tried even more authentic ingredients, like tofu puff, lamb, enoki mushroom, white radish, lotus root, and if you're more adventurous blood curd and beef entrails. My favorite in the non-spicy broth is frozen tofu (you just freeze soft tofu and throw them in, literally) it will develop these honey-comb-like structures that soak up all the delicious broth, YUM!
Dipping sauce wise, personally I just like to add condiments to plain Chinese-styled sesame sauce, like fermented bean curd, cilantro, green onion, chili oil, soy sauce, garlic chive blossom sauce, toasted sesame oil, and Chinese black vinegar if you like something tangy. What josh did was totally new though, and that garlic sesame sauce looks so good. I'll definitely try it out the next time I have hot pot!
So, I'd like to try this but my wife doesn't eat red meat as it makes her sick. Any choices or advice on meat combo that isn't cow or lamb?

@@brooksnorris4118 you could totally use thinly sliced fish, shelled shrimp, oyster, or fish balls. Just make sure everything is thawed so they cook quickly in the broth.
Mushroom powder is basically a substitute for MSG because a lot of Americans don't like the idea of MSG (I know there is nothing wrong with it).
@@brooksnorris4118 Any shellfish or fishballs are delicious! I wouldn't recommend chicken though, it tends to get pretty tough.

As Chinese, I'm amazed how RIGHT Josh did the spicy flavor pot. Just two really important tips about enjoying hot pot: 1. You need really THIN sliced beef or lamb to maximize the flavor. 2. There is actually a dipping sauce for hot pot: half table spoon of Tahini (sesami paste), 2 table spoons of peanut butter and a table spoon of sesami oil, blend well with some non-chili soup (or just hot water) till the whole thing becomes sticky but diluted. It would be the best if you can get some of the "fermented bean curd" in it, but it's optional. Last but not least, some chopped coriander and green onions.
I keep seeing comments like these and I'm getting more hungry!

For those of you that have an instant pot and don't want to buy a whole extra thing to be able to do hot pot, you won't be able to divide the broths the same way but you can do a one-broth hot pot by sticking your instant pot on saute mode!
I did this a few weeks ago and it works like a charm!

In my family, the broth is always homemade by simmering some beef beginning in the morning, and then flavored with some herbs. The dipping sauces are extremely accurate, however at our home we use sesame paste and then mix that with the sesame garlic, the soy sauce compound, and a lot of other stuff, and then loosen with a bit of broth so we can dunk it because that is how we do it at my house.
Overall this is extremely accurate for a more high end hotpot, good video.

I love all different types of hot pot! I’m Cambodian and my culture loves doing a hot pot dish called Yao Hon. Its more barbecue sauce based with coconut milk and coconut soda! It sweet, salty, spicy, creamy, and more! So flavorful that you didn’t need dipping sauce, although we sometimes like having fermented soy bean paste on the side.
When my (white) parents came to visit me in Japan 6 years ago, I took them to have hot pot (the Chinese type, not the Japanese nabe style).
Man, my dad was SO disappointed and complained it was just "soup with wilted vegetables and meat you have to cook by yourself". But after the first bite, my friends, he was an enlightened man. It's a pretty famous all-you-can-eat hot pot, so I think in total we repeated everything (various meat cuts and vegetables) 3 or 4 times.
He even made me take them to the same store again before they left Japan.
All of this to say, nabe/hot pot is one of my favorite foods of all time. It's warm, comforting, and really delicious. If you don't have a hot pot/name restaurant close to home, please try the recipe! You will never regret it!
To be fair, I hate going to a restaurant for hotpot too for the same reason since I do make my own broth / stock for the soup base. lol…
Lol!!!! Back in the 70's, my mom had her parents over for dinner. We had beef fondue. My grandpa was SO pissed that my mom invited him to dinner than had him cook his own food!!!! 😂 Yea, mom didn't make that mistake again!

what I love doing with hotpot is making my own dipping sauce by combining the sesame oil-garlic and vinegar-soy sauces with chilli oil/chilli crisp, and then cracking in one raw egg and mixing it all together.
also I agree with the "no rice during hotpot" comments. you already have dumplings - save more space for the beef.

Perfect timing with your video. I just moved to the capital of hotpot, the city of Chongqing, China. There’s like 10 hot pot spots if not more less than 5 minutes away from my place. This food is paradise. For the authentic experience, take all of your spicy crystalized orange mixture and put it in a pot without a non spicy side. Just one quarter of it is just not the punch in the gut that the real thing is supposed to do to you. And don’t forget a bunch of beers, you can’t be sober by the end of this experience. Of course, nothing wrong with the non spicy and multiple variations of hotpot, but the Chongqing experience deserves a try.
This video makes me realize how Chinese my kitchen has become during COVID... I have all of the ingredients you used to make both soups on hand 😊🍜🥟🥢

Kudos for making hot pot from scratch! You could also use meatball, fish, shrimp and tofu as accoutrements. One tip is to have noodles and dumplings as the last ingredients you put into the hot pot, so that they can absorb all the flavors of all the previous items! Usually we don't eat hot pot with rice, as noodles and dumplings are enough, but you can have it however the way you want it!

My wife just bought me this same dual hot pot that you’re using for my birthday. I am SUPER excited to use it!
Best way to use it, is to invite a bunch of people you care about to eat with you. Shabu Shabu is best, when you're elbow to elbow, talking loud, and happy.
Sesame sauce is amazing, I think it taste best with veggies because I think ponzu should is too sour for vegetables and this is my recipe on it, it doesn’t require sesame paste
In a food processor add
- 2 tbsp of toasted white sesame
- 1 tbsp of rice vinegar or 1/2 tbsp of white vinegar
- 1/2 tbsp of soy sauce
- a pinch of salt and a pinch of pepper
- 1 tbsp of mayo
- 2 tbsp of your broth or just water
- 1 tbsp of sesame oil (optional but brings a nice flavour to it)
and blend, it is good with meat and best with veggies

there's many different types of soup stock for hotpot.
also for my family we like asian radish aka daikon as well as silky soft tofu for pre-added food to the soup no matter what soup base we use.

Oh my gosh this is heaven behind heaven!!!!!!!!!!! My husband and I both come from very strong culture families. We are both Cajuns from Louisiana. And we love our food!! But we also are obsessed with other people's culture Foods. I have spent the last 20 years grabbing people from different nationalities and having them teach me everything they can about their traditional foods!! And it's super cool because we raised our kids this way and they are obsessed as well with different types of culture foods!! This looks like something I could not pass up!!!!!!!!!!!❤❤❤❤❤❤❤

That spread looks amazing! Always skip the rice when I eat hot pot at a restaurant or at home - for me, it’s all about the meat and veggies, maybe some glass noodles. The spicy mala sauce seems like it would take a lot of work and ingredients (we usually buy a vacuum sealed hard block of paste), but the rest of the recipe is pretty accessible. Making hot pot at home is a great meal for a special occasion.
I've never actually heard of rice with hotpot before. Usually for a starch, folks just throw some noodles in the pot

Just make it yourself. Instead of doing what Josh does you can just buy the premade soup base and sauce and then just pick whatever it is that you want in your hotpot.
It’s really easy to make at home. Josh just went the extra mile here.
hot pot is literally any soup base (spicy, bone stock, tomato, etc..) + any thing you want to eat with the soup base, it doesnt have to fancy at all. You can just do it over the stove as well, no need for the special equipment.

Never had it but I need this in my life!
This take on hot pot was actually pretty good both in terms of adhering to tradition and a unique take. However, for dipping sauces, I would say the most important sauce for chinese style hot pot would be sesame sauce, or majiang. It's a mix of sesame seeds, toasted sesame oil, and a variety of other ingredients of your choosing ranging from fermented bean curd (jiangdoufu/"jiang tofu") to tianmianjiang to even miso, and puree'd in a blender. It's the consistency and color of liquid peanut butter, and it's almost a must have in hot pot.
LOL as someone growing up where the Niuyou hot pot originated, I'd rather go with sesame oil plus garlic and salt for dipping sauce.
@@yx3255 sesame sauce is Beijing/Muslim influence. Lot's of sesame sauce in Shaanxi or in the northwest, but you won't find anyone in Sichuan using it. For Sichuanese, the OG of hotpot, sesame sauce for hotpot is like katsup for steak
@@bailewen Sichuan hotpot is not OG. I say this as the granddaughter of a Sichuanese. It just happens to be the most well-known in the west. All Chinese provinces have their own preference and history goes back so far its hard to say which is the oldest. Most hotpot restaurants in China will offer most types of dipping sauces and sesame/fermened tofu sauces are truly a flavour bomb
@@Arwenpii nah...throughout China, with only rare exceptions, it's all either Sichuan or Beijing style (there's the occasional Guangdong style, but it's rare). All the localities might have their own spin on it, but even if you are in Guangxi or whatever, they will make up a Sichuan sounding name for the shop

I'm obsessed with spicy food- like SPICY food, and traditional mala hotpot broth has consistently taken me out. Trust y'all, this stuff isn't something to mess around with. That being said, Josh's doesn't look too oily which I imagine would lead to a milder broth. It's an absolute flavor bomb that keeps me coming back
One of my personal favorite food items to add in here is Egg Dofu, it is velvety and soaks the flavor so well.

Other soup bases I love in hot pot is tomato and pork bone. Tip: If you can't find dried shitake mushroom and jujubes (AKA red dates), you can add corn and carrot to your clear soup base for some extra sweetness.
Also, I'm chinese but the shabu beef is a little too thick for hot pot imo ... don't at me pls 🙃
Be REAL careful if you make that spicy soup base (MaLa) at home. That stuff will blow your face off and make your mouth feel numb like you just drank a chemical from the cupboard under the sink...juuuust the way I like it (it's so good)

Good video! Traditional spicy hotpot is always too oily, Josh's version is better and drinkable but it needs more kinds of spices.
