Testing out 6 Protein snacks - They were all fantastic

- Trying to find high protein snacks for the family. Not only healthy snacks but snacks that taste amazing. All 6 recipes were really really good - but a few of these were outstanding.
HIGH PROTEIN PEANUT BUTTER BALLS
1C peanut butter - 1/3C protein powder 1/2C powdered sugar
Combine well. Scoop by the tablespoon full onto cookies sheet. Refrigerate for 30 minutes.
CHOCOLATE PROTEIN BALLS
1C rolled oats - 3 tbsp cacao powder - 1 tbsp chia seeds - pinch salt
2 tbsp protein powder - 1/2C peanut butter - 1/4C honey - 1/4C choc chips
Combine all ingredients. Mix well. Scoop by tablespoon on cookie sheet. Refrigerate for 30 minutes.
PROTEIN EGG BITES
meat of your choice - I used Pillers Pepperoni sticks and Pillers Kolbasa
12 eggs - salt - pepper - Italian seasoning - cheese
Spray a muffin tin with oil. place desired amount of your meat choice on the bottom. Crack an egg into each. Sprinkle with salt, pepper Italian seasoning and cheese. Bake 325 for 25 minutes.
ENERGY BITES NO BAKE - by far our favourite
1C oats - 1/2C ground flaxseed - 2/3C coconut - 1/C peanut butter - 1/2C chocolate chips - 1/3C honey - 1tsp vanilla - optional 1 tbsp chia seeds
Mix all ingredients well. Chill for 1-2 hours to help hold it together while you form into balls. Roll into balls about 1" in size.
CHIA SEED PUDDING
1C coconut milk - 3 tbsp chia seeds - 1-2 tbsp honey
Mix together and let sit about 15 minute. Enjoy
COCONUT CHIA BARS
1C pumpkin seeds - 1/4C chia seeds - 1/2C sesame seeds - 1/2C dehydrated fruit of your choice - 1/2C coconut - vanilla - cinnamon - 1/3C honey
Combine all ingredients well. Line an 8x8 pan with parchment, add the seed mixture - pat firmly. Bake at 325 for 50 minutes. Enjoy.

Those egg bites look delicious. I am hooked on the Jimmy Dean brand of them so will have to give a try. Also, the no bakes with coconut - yum! 😍
