The mussels must be VERY FRESH. That makes all the difference. The first time I cooked that dish (same as Laura's), the mussels were one day old (so I was told... more like 2 days in fact, maybe 3) but they were okay, save for a about 5 or 6 that would not open when presssed or cooked. About a week later, at about 8am, I got mussels that had been caught 2 hours before. I put them in the fridge, and cooked them at 11am for an early lunch, using a recipe very similar to Laura's. Compared to the "old" mussels of a week before, it was night and day. The freshness of those musssels gave them another dimension and a much more wonderful taste. This time I used Laura's recipe again, but added a bit of fresh celery and a teaspoon of fennel seeds.

I make mine very similar except i use some butter, take out the tomato and parsley but add fresh basil instead. I use the remaining mussels and broth over pasta.
Hi laura.. Cld you show us how to whip mussels on garlic n butter sauce? The kinds which u can even hv with toasted bread at the same time?

i actually do the same mussels but in addition i add green onions and let them simmer in the oil and later when the garlic is cooked i add some tomato sauce and two cardamom pods

I absolutely love your videos and fun personality. Two requests: 1) in future, if you have something like mussels that take some pre-preparation, please show the prep as part of the video. 2) if an ingredient is hard to clean or prep, then the recipe isn't so "simple and easy" anymore. And that's FINE -- not everything has to be -- but it's a bit annoying when you call something simple and it turns out the prep is hard. But anyway, I really love your videos anyhow and wish you a happy holiday!

Hey Laura, Beautiful, But if I may, I use a deep Pot,then after I dump Mussel in, I quarter 2 Lemons, Squeeze in and dump rest to steam with Mussels, When I plate I shower with Chopped Parsley, FANTASTICO!!! Cheers.
If I may, lemon is used when you don't use tomatoes.

If there's any broth left-over, I freeze it to use in a seafood soup, like Boulabaise or ciopino or chowder.
