@@winmod70 yes! I expect many folks will just have plastic cutting boards but I agree. Oiling your wood cooking gear is extremely important. Wood spoons, knife handles, cutting boards... A good oil will make them last for years

There is nothing like Italian food. All heart goes into it. I love cooking…especially Italian food. My mom taught me how to cook good, we have every Sunday meal at her house, smelled her tomato sauce from outside. She’s was a great cook, she’s gone now, so my sisters and I carry on the tradition. @ Phyllis Ann Bonviso , Ma'am, , i'm not sure why you don't eat mussels, allergic ?, they are not fishy tasting at all, I don't like fishy seafood , but I will eat mussels as they are not fishy tasting at all, very mild. I like a fresh garlic/olive oil poured in mine, delicious. Try them that way, easy to make. God bless you & yours

I'm 58 yr old Irishman from rural Kentucky & shallots would be considered a root product( grows underground), at a garden center buy small shallot sprouts, with a spade dig in your garden & completely cover the bulb leaving a little of the top green sprout above ground for sunlight. Do not water them, the roots will work their way down for water & be sturdy & grow better. I hope that helps you ma'am, God bless you & yours.
Chef, thank you for bringing this video to us. It brought back some very dear memories I have of my mamma and papa not so long ago. Dad would buy the muscles. His job was to scrub and clean them. Mum would prepare the sauce and cook them, enough to feed 20 people, all the kids and grandkids and more. They were absolutely beautiful, the main ingredient was love. They are no longer with us, RIP, but the recipes and memories live on. You made my day whilst in hard lockdown here in Sydney Australia.

In Staten Island, Jersey Shore and The Bronx, we eat them either way. Half the table uses a shell as a scoop spoon. The other half mocks them. It’s always a good time.

Keep the shells of the mussels, dry them out, crush into small pieces and mix into your garden soil. It adds nutrients to the soil.
