The white mussels were done way before you put the lid on.... come on boys... get it together. Agree on serving the red on pasta. Such an underrated, absolutely amazing, sauce. I'd put down a pot or two of mussels with youz guys anytime!

That's pretty much the same way we do it in our Sicilian - American kitchen. We usually add a bit of flour ,mashed into the butter, before adding it to thicken the sauce a bit. This allows the white sauce to cling onto the pasta .I feel it's a shame to let that scrumptious sauce end up in a puddle on the bottom of the bowl only to be salvaged by soaking in bread . But, hey, that's just me being me!
