Spaghetti with homemade BOTTARGA

    While for spaghetti with bottarga, a simple recipe but with a spectacular flavour, you will need them.
    Spaghetti 100 g
    Garlic 1 clove
    Extra virgin olive oil. 2 tbsp
    Bottarga 20 g
    Parmesan 1/2 tsp
    1 pinch Black Pepper
    Zest of 1/2 lemon

    Here in the USA during springtime we can shad roe. These are salt water fish that swim into fresh water rivers to spawn. I bet it would be good preserved as you do in the videy

    In Sardegna bottarga is used with pasta marinara. My cousin had a meltdown when I asked for pecorino for the pasta marinara. "Formaggio sul pesce, ma sei pazzo😂"

    I'll try this in 3 weeks when the bottarga I'm making from your bottarga recipe is done. For dinner tonight I had a pasta sauce with some cacciatore I made from your cacciatore recipe (both of my arms were spinning in circles!!).

    In the UK you can buy e.g. classic Sicilian Bottarga but it is very expensive so it is nice to see that you only need a little for this dish.

      In Sicily is from tuna in Sardinia from cefalo

      Yes cefalo, we call It muggine here in Sardinia (Lissa in Sardinian), the grey mullet bottarga is also the most expensive one and in Japan the bottarga is called karasumi btw.

    So simple and judging by the speed of rotation of your hand at tasting, it must be delicious. I guess the Botarga is a form of dry fish. It's actually quite delicious. I will sure try this! Thank you chef. Apparently, it's quite hot where you are though you still choose to be appropriately dressed in shirt and tie for the video. So you must go for such smart, quick, simple yet delicious meals and chill out the rest of the time😂
