He is so relaxing to watch. I love these recipes. When my mother made meatballs/meatloaf she always added eggs, milk and bread. We are not Italian, we are Black Americans, but we lived in a neighborhood that was predominantly Italian at the time. So I guess that's where she got it from.

My ragu always sucked because the sauce would always come out either too sour or too thin. Thanks to Mr Antonio Carluccio's video on Carbonara my version is pretty slick. Looking forward to fixing my Ragu with this recipe asap lol

If ragu is sour it's the tomato, you should always taste it and add more onions, shredded carrot or simply add little sugar to try to fix it, but best fix is to buy sweet fleshy tomato to begin with.

Depending on what you're doing some hoppy beer might work? Like IPA. You should be able to get dry hop extract that Brewers use as well.
We have wild hops in our garden - they mature quite fastly, so maybe try to grow them since nobody knows when will the Corona crisis end.

Wonderful sauce and thank you for reminding me of my Grandma's Sunday dinners. Her sauce was so good. Always with sausage and meatballs. Special occasions she added brasciola. She made enough for the week because Grandpa wanted pasta three times a week. Grandma kidded that she had sauce 35 years old. She always kept a little of the previous week's sauce to start the new one. Ciao amico😋

Ciao! My family uses our grandmas recipe too, when we make bracciole we use pork, hard boiled egg, parsley and basil and wrap it with string and put it in the sauce. This sauce looks great! May I ask what region your Grandma is from? Grazie!

We all know this sauce is at its peak only in summer from fresh sweet ground grown tomato. When that's not available it's a different game. Taste of the tomato matter way more than how it's canned.
