I really like both, last year, when it was the first year of war and I lost a job and everything was so damn uncertain, I mostly survived on your recipes, on the convenients that I'd pre-cooked in Autumn. I'd made wine, rice wine, anchovy, these tomatoes, eggplants, lardo a lot of stuff lava cake, pan pizzas. That actually helped me to get through first year of war in my country, your recipes is so diverse, beautiful, easy to reproduce, I'm glad this channel exist.

I finally opened a bottle to taste them tonight Wow! So good. So much better than store bought. Thank you so much for sharing and teaching us this recipe/technique.

I grow a popular variety of cherry tomato here in Northern California . It makes an excellent golden pasta sauce. Will try this, I love sun dried tomatoes.
Trying this for the first time, unfortunately in Canada, weather at harvest time does not allow for drying outside in the sun. I have dried San Marzano tomatoes in the oven and am now ready to finish the process. Thanks for your very informative and amusing video

I live in the northeast US. Late summer and fall weather can be tricky here, so I put the tomatoes on a tray inside my cold frame in the sun. It worked spec-tacu-lar 🙂 - perfect temperature with no rain or insects on them. I used San Marzano and Grappoli D'Inverno. Now, I'm just waiting to taste them. Once they are made (before opening), are they shelf stable and safe to keep stored in a dark cool place, or should the extra jars be kept in a fridge until ready to open and enjoy? How long are the unused jars safe for keep if shelf stable in the pantry?
Hello and thanks for your work. I've tried several of your things and all turns great. As you said some mold is possible to develop on the tommato and this is the case with me. I disproved salt in vineger and lightly brushed the molding spots with the solution. The mold disappeared. Is this correct thing to do? ❤❤❤

Greetings from Prachuap Khiri Khan. This time I'm going to make them. I was going to after your first sun dried tomatoes video, but laziness won. We still have a lot of sunshine here despite it being rainy season.
I put a tray of tomatoes in the sun this morning but when I got back from work they were swarming with flies ☹️... i will try again in the morning... i have 30 cherry tomato plants growing in my yard. I planted several Tomatoes last year and when I would pick them, if they had any insect bites or were too ripe, then I would throw them out of my sight (into the backyard).. Well, this year every tomato that I tossed into the yard (last season) decided to grow! I've had to pluck of hundreds of tomato plants! Lol... i pick close to 1 full walmart sack of tomatoes every day after work... good thing my family LOVES tomatoes.

it is super hot here in summer (42C) but I still use the dehydrator. it dries in 12 hours not 4 days. he made me laugh when he said there are no birds that like tomatoes. I never thought of that. very helpful video though. I make these often.

I dry them for a few days in the normal oven in 100 deg centigrade - abt two hours per day. Perfect result.

The best place is the basement but the most important thing is that the oil cover all the ingredients

What you could do about the tomatos floating up to the surface is fill a plastic bag with water and leave it as a weight to keep them submerged.
This is why you need to boil them with water and vinegar 😉

it is super hot here in summer (42C) but I still use the dehydrator. it dries in 12 hours not 4 days. he made me laugh when he said there are no birds that like tomatoes. I never thought of that. very helpful video though. I make these often.
