Italian Homemade Sun Dried Tomatoes 🍅 how to make it from Fresh Tomatoes

- Today let's prepare dried tomatoes in oil together starting from fresh tomatoes.
In this video I experimented the same recipe with 4 types of tomato: Cherry Tomato, Piccadilly Tomato, Yellow Datterino Tomato and Red Datterino Tomato.
You will then need:
Tomatoes 3 kg
Salt NOT iodized
Water 1 liter
1/2 cup white vinegar
5 laurel leaves
Origan
Garlic 1 clove
Extra virgin olive oil 1/2 litre

Thank you, it's a very convenient recipe, and it's very fulfilling! I've learned it here on your channel Andrew, along with cured/marinaded eggplants. I really like both, last year, when it was the first year of war and I lost a job and everything was so damn uncertain, I mostly survived on your recipes, on the convenients that I'd pre-cooked in Autumn. I'd made wine, rice wine, anchovy, these tomatoes, eggplants, lardo a lot of stuff lava cake, pan pizzas. That actually helped me to get through first year of war in my country, your recipes is so diverse, beautiful, easy to reproduce, I'm glad this channel exist.

Love your recipe for this. It’s always requested from family, friends and neighbors. I live in Missouri,USA. To my disappointment it’s much to humid to successfully dry in the sun so I use a dehydrator instead.

I dry them for a few days in the normal oven in 100 deg centigrade - abt two hours per day. Perfect result.

I saw your sun-dried tomatoes video last winter and decided to grow some cherry tomatoes specifically to try this out. We didn't have the weather to dry them outside, so I used a dehydrator. I finally opened a bottle to taste them tonight Wow! So good. So much better than store bought. Thank you so much for sharing and teaching us this recipe/technique.

You mentioned your cherry tomatoes gave you the best dry yield at 1000g = 115g (11.5%), which is true for total weight, but your yellow plum tomatoes actually gave you the best percentage of dry weight at 500g = 64g (12.8%).

Brilliant.I used our best home grown tomatoes. Living in Colorado things dry out faster but the elevation makes the sun too intense so I used this recipe faithfully using an electric food dryer. The results were spectacular. Best sun-dried tomatoes I have ever had. Love this channel.

It's humid, cloudier and cooler where I live so I dry the tomatoes in a dehydrator. Works for me.

update from SW FL, USA...the Summer heat is soooo HOT, that no amount of care was able to save my Summer vegetables. Including, sighhh...tomatoes! If Global Warming is for real, its gonna take some innovative growing to keep us all fed. Shade cloth wasn't enough, its the awful hot air temperature...115F! Even the papayas are scalded. Any other home growers having better luck?

I live in the northeast US. Late summer and fall weather can be tricky here, so I put the tomatoes on a tray inside my cold frame in the sun. It worked spec-tacu-lar 🙂 - perfect temperature with no rain or insects on them. I used San Marzano and Grappoli D'Inverno. Now, I'm just waiting to taste them. it is super hot here in summer (42C) but I still use the dehydrator. it dries in 12 hours not 4 days. he made me laugh when he said there are no birds that like tomatoes. I never thought of that. very helpful video though. I make these often.

Hello and thanks for your work. I've tried several of your things and all turns great. As you said some mold is possible to develop on the tommato and this is the case with me. I disproved salt in vineger and lightly brushed the molding spots with the solution. The mold disappeared. Is this correct thing to do? ❤❤❤

Thankyou for some great advice. I have been growing some principe borghese tomatoes and I thought I would give drying them a go, only problem is I am not blessed with the beautiful Italian sunshine so I am going to try in the oven however my lowest setting is 75° so I'm going to put them in the oven after it has been turned off after cooking ( lower heat & no extra energy costs ) do you think this will work ?

What you could do about the tomatos floating up to the surface is fill a plastic bag with water and leave it as a weight to keep them submerged.
This is why you need to boil them with water and vinegar 😉
Once they are made (before opening), are they shelf stable and safe to keep stored in a dark cool place, or should the extra jars be kept in a fridge until ready to open and enjoy? How long are the unused jars safe for keep if shelf stable in the pantry?
