Canning Green Tomatoes

  • You may have been left with an abundance of green tomatoes, if they didn't have an opportunity to ripen before the cold weather hit. To reduce possible waste, you can clip the vines and allow some of the tomatoes to ripen indoors. You could make fried green tomatoes or green salsa. If you have quite a few tomatoes on your hands though, another great option is to Can Green Tomatoes for future use.
    Water bath Canning green tomatoes is fairly simple and requires minimal effort, in comparison to other canning recipes.
    1. Fill the water bath canner and bring to a boil. (You can also add a splash of vinegar to help avoid a white residue build up on the exterior of the jars.) Place rack in pot and add jars to heat them.
    2. Bring an additional 4+ quarts of water to a boil. This will be used to fill jars.
    3. Wash tomatoes, remove the stem end, and slice into 1/4 inch thick slices.
    4. Empty and remove jars from the water bath canner.
    5. Layer sliced green tomatoes into warm jars.
    6. Add 1 to 2 tablespoons of lemon juice and ¼+ teaspoons of canning salt, if desired.
    7. Pour boiling water over the tomato slices, leaving approximately 1 inch of headspace.
    8. Using a spatula, plastic knife, or debubbler tool, remove air bubbles; check for headspace.
    9. Wipe the rim of the jar with a paper towel dipped in distilled white vinegar.
    10. Center lids on the jars and twist the bands on until they are finger tight.
    11. Boil pints in a hot water bath for 35 minutes and 45 minutes for quarts.
    12. Remove from the water bath and allow to cool for 12-24 hours.
    13. Label lids and store in a dark, cool place for up to one year.

      Great question! I probably should have mentioned some uses in the video. In short, I drain off the liquid and use them anywhere I would normally use canned red tomato’s when cooking. Some examples are chili, soups, stews, green salsa, and sauces. They are delicious battered and fried too! Keep in mind they don’t have the sweetness of red tomatoes so be sure to factor that in when cooking with them.
