Canned Slice Green Tomatoes for Fried Green Tomatoes

- Wash and slice green tomatoes.
Place sliced tomatoes in wide mouthed pint jars up to 1 inch headspace.
Boil water
Place 1 tablespoon of bottled lemon juice in jar.
Add boiling water to the jar up to a 1/2 inch headspace.
De-bubble jar. Wipe rims, Apply lids and ring.
Process 40 minutes in a water bath or steam canner.
Let cool completely, remove rings and check for a proper seal.
I can vouch canned green tomatoes fry up beautifully! In fact, they fry better than raw. Since I'm slicing-challenged, a mandolin slicer (and cut proof gloves) makes the job so much easier. Love Rose Red Homestead! Ohhh, had never thought a dipping sauce - now I'm hungry - lol. Thank you!
I like them better than raw too, I just have to be a little more gentle when breading them.
