The Crispiest Oil-Free Roasted Chickpeas 2 Ways | Nutritarian Recipe

- So many of you have been asking for this roasted chickpea recipe after seeing it on my Big Italian Weightloss Salad video. So here are TWO ways of enjoying chickpea croutons!
Garlic & Onion Crouton
- 1 can chickpeas (drained, rinses, dried)
- 2 TBSP lemon juice
- 2 TBSP nutritional yeast
- 1 TBSP garlic powder
- 1/2 TBSP onion powder
- 1/2 TBSP paprika (smoked or sweet is OK)
Taco Spice Crouton
- 1 can chickpeas (drained, rinses, dried)
- 2 TBSP lime juice (or a agave or or honey or a combination of the two)
- 2 TBSP chili powder
- 1 TBSP garlic powder
- 1/2 TBSP onion powder
- 1/2 TBSP cumin
Method
- Roast at 250°F for 20 minutes; shake halfway through
- Remove from oven
- Crank oven temperature up to 400°F
- Season with your flavor combo from above
- Bake 20-30 minutes until fully brown and crispy; stop every 10 minutes to shake / stir to ensure nothing is sticking. Taste the chickpeas every 10 minutes to check for doneness. These can go from perfectly cooked to burn in less than 3 minutes.
ALLOW TO COOL FULLY then store in an air-tight container at room temperature. Use within 2-3 days. Adding a dry paper towel to the air-tight container will help preserve crispiness for longer.

Chickpeas take 2!!! Used same recipe, but put them in my air fryer at 390 for 12 minutes. Perfect!!!!😁

I’ve never had any luck roasting chickpeas. First time I see this method, will 100% try this with my fav seasoning (salt, garlic, cumin, chili & cinnamon), hoping for the best!

Here's a tip: Follow the recipe! I made the mistake of mixing the lemon juice with the spices, which resulted in a paste, which resulted in soggy chickpeas. Next time I'll do it right.
I did the same thing but threw it out before trying to rub it into the chickpeas. Trying again today. 🤞

You are my hero! As much as I wanted to make that banana bread, this is definitely a better choice for me right now and I’ve got all the ingredients on hand. I love garbanzos, but haven’t had great luck with roasting them. I love this two temp process. I’m going to make them this afternoon, along with some kale chips in my air fryer.
I just made these!!! The ones I didnt burn were game changing!!! Really crunchy and the seasonings tasted amazing. Chickpea were on sale this week so I have 4 more cans. I'm going to make some more when I'm not trying to put together a casserole at the same time. Haha. 🥰👌

That's a great idea to put nutritional yeast on them. I would have never thought of that. BTW, I cook soybeans in my instant pot and roast them. They have half the carbs of any other bean

I try to eat nutritarian most of the time. I traditional baking projects and making desserts, so I unusually give most of that stuff away to coworkers, friends, and building staff.

I love this idea and I am going to try the italian dressing also. it looks amazing. one quick thing though... plastic. never use plastic in the microwave they tell us.. why? bc when heated plastic releases toxins that are cancer causing called dioxins. the same is true if the plastic is degraded in any way. the lemon is very acid and will leach the dioxins from the plastic container. please people just buy a lemon or we buy glass bottles of lemon juice at our regular grocery store. Just wanted to share a heads up when everything else is so healthy. otherwise love the videos and congrats on the weight loss. .

I dried my chickpeas with a tea towel. Any lint-free, washable absorbent kitchen towel should work well. Alternatively paper towels would get the job done. Word of caution: be careful not to push down while drying or the chickpeas will all break open. to be extra-gentle, I lined a baking tray with my towel, then shook it to roll the chickpeas m around (instead of rubbing them). The towel drying process also removes some of the loose outer skins.

It might not be enough for a full video, but I’ll touch on it either in a recipe video to an FAQ video. Basically it’s the same yeast as for bread making. It’s proofed for a few days to get really active. Then they pasteurize it to kill the yeast. It then gets ground up into powder. It brings a lot of cheesy tang and generally adds a savory complexity. Fortified versions are high in lots of vitamins and minerals (I buy unfortified since I eat so many other veggies I’m getting my RDA of most through my regular diet).

I haven't tried sweet chick peas before -- just spicy-sweet using taco seasoning and agave nectar. I'll try to come up with a sweet variation though!

Welcome! I always buy non-fortified varieties. My favorite is from Sari Foods (but it’s really expensive). My go-to has been the While Foods 365 brand; good taste and texture and pretty affordable.
I normally don't like chickpeas but I've never had them dried before. Might have to give this a try, and it's very expensive if I still don't like them.

Ive never had a corn nut 😅 so I can’t say for sure. To me,the texture is like a very firm cereal (thinking of “Honey Smacks” for some reason), but not as hard as a nut.

Mine came out too hard. :( Almost damaged my teeth . The flavor was great though. I love chick peas! I can eat them right out of the can.
Oh no! Glad you liked the flavor, but sad they were over-done 😢 I always use Cento brand chickpeas (can’t imagine brand would make a big difference).
Appreciate your oil free recipe. Suggest you don't use tin foil. Heavy metals - not good for the body.
