Cabbage, Kale & Mandarin Salad | Forks Over Knives | Nutritarian & Vegan | Recipe Test Review

  • Many of you have been requesting Chinese, Asian, and Mandarin salads. This recipe from Forks over Knives checks those boxes and looks incredible. So we're testing it out today! The base of the salad is made from purple cabbage, kale, carrots, and bell peppers. All the veg is shredded or cut into strips, so the texture of this salad is "slaw-adjacent." Sweetness in this salad comes from mandarin oranges (or clementines as an alternate). The dressing is simple, flavor-packed, and oil-free. Just orange juice, tahini, rice vinegar, soy sauce, honey, and sriracha. The portion here is MASSIVE -- it fed me for 4 meals! The best part of this salad -- much like other cabbage-based salads -- is that it gets BETTER with age. I enjoyed this over the span of 3 days and the flavor and texture kept getting better.     Oh I hope you come back to UA-cam! Your videos are the most inspiring ones I've seen in a long time! I bought the oxo bowl/chopper...game changer for me as I can easily be a salad quitter the minute I realize I need to chop my lettuce. I can't stand eating full leaves, but when I saw your videos with the bowl and chopper, I literally ordered it and made my first salad last night. That was the first time I actually felt truly satisfied after having a big salad.     Thank you for this! Your weight loss, food prep and salad videos have been a real inspiration. I prepped a ton of veg yesterday and had 2 GIANT salads today. Your Italian dressing using beans for the creaminess instead of oil was really intriguing. (I made it with a slight variation. After tasting I added some Apple Cider vinegar and 2 pinches of monk fruit sugar.) I also started reading Eat to Live. I cannot thank you enough for helping me shift my thinking.

It's hard to be inspired to make salads when all the videos you watch for entertainment are much heavier (but delicious) recipes. The ones you show us look so nice and easy and filling, I find myself thinking... wait, what was that salad I saw the other day? I'll make that!

    I hope you make more salads. I added the sweet potato to mine after I saw yours and Sweet Potato Soul's video to my salad today. I actually decided to make the big salad for my lunch after seeing your weight loss video. I made mine with spinach, romaine, arugula, Brussels, zucchini, cilantro, mushrooms, Campari tomatoes, pumpkin seeds, and some craisins. It was inspired by your meal prep and I added a low-calorie dressing. It was sooooo good. I hope you do more salad videos. I definitely will be watching. I also got the pre-cut mushrooms and cooked them down so I can eat them through the week thanks to your tip.

    Made this yesterday. Soooo good. I cheated and bought a container of Kale Crunch salad. It already had the red cabbage and carrots. I just added the rest. It was so good. I may have put in a bit to much ginger in the dressing but otherwise dam delish. Thank you Geoffrey. Oh and I also chopped up all my veg like you. Put them in containers so I’m ready to go!!

    I love kale salads! I think the 'massaging' is unnecessary if you simply chop it very fine, which is my preference for several reasons.

    Thank you! I'm going to use sunflower butter and sunflower seeds in lieu of the tahini and almonds. And I'll be using a green cabbage. I really like salads with kale and cabbage because they do hold up longer as you said.

    I want you to know this salad is Heavenly. I didn't think it would be so good, because Kale is tough! But I ate it...ALLL Boo!

      While I typically don't buy kale as often because of the large, curly and tougher leaves, I really love the long narrow leaves of the kale called either Lacinato/Dinosaur/Tuscan or Nero kale. Its leaves are narrow, thinner, flatter but wavy. Delicious!

    Very yummy! Made it for dinner but had to make a few substitutions. I had no kale or pepper so used Savoy cabbage and cucumber. Very good!

    For the record...I did not thoroughly massage my kale & it shows. Tastes a bit earthy. *However* I can taste around that & am enjoying - looking forward to having more tomorrow after the flavors really mesh. :)

    It’s helpful to use a bit bit of acid, such as lemon juice or vinegar, when massaging your “adult kale.” The tough leaves get more tender, and faster.

    I'm not vegan. However, I like recipes where the natural color of the vegetables is beautiful and nourishes both the look and the mind.
    It's a recipe that everyone can enjoy, whether it's vegan or meat or fish lovers!

      YES! I eat meat and animal products occasionally as well. But recipes that are this fresh and flavorful can't stand on their own even without a "center of plate" protein. Though I've seen some folks on Instagram making this with salmon and it looked 🔥🔥🔥

    I fell off the plant-based diet a couple of years ago (after 20 years). Finally motivated to get back at it, and I have enjoyed your videos. They are helping my motivation. I'm definitely trying this one.
    Just as an FYI, if that's OK, the recipe does indirectly tell you to remove the pith and membrane from the mandarin when it tells you to "section" (verb) the orange. That's the process of removing the pith and membrane with a knife. You wouldn't need a bowl to catch the juice unless you were doing that. The FOK photo shows the orange without the membrane, which is called a supreme.
    Obviously, it's completely up to the individual if they care to do that or not. Personally, I will only do it if I think it's worth the extra work. But I thought you might be interested in it from a culinary standpoint in case you run into the term again in the future.
    Oh, by the way, this old dog has already learned a couple of new things from you. I'll never cut a jalapeno any other way again. Thanks!

      Thanks for the tip! I've supremed (is that the past-tense?) grapefruit before, but it never occurred to me to do it to mandarins since they're so small / delicate. I found this recipe on the FOK website, which didn't include the step-by-step photos, but their note about "catching the juice" made me wonder what was going on 🤣 I appreciate you clarifying

    Do you eat all your big salads right away? I like to make a big salad I can eat over a few days. Like Asian coleslaw, Greek or chilli lime chunky salad. Which of your can be kept for a few days?

      Normally I like to eat a salad shortly after dressing it to avoid sogginess. This salad in particular I ate over a few days and it kept getting better. As long as you use hearty veg as the base (kale, cabbage, radicchio, etc), salads can be kept dressed for a couple days without any issue.

    If you lay your Kale leaves on top of each other then roll it all up like an egg roll then cut super thin end to end...very easy cutting

      Great tip! I tried to stack, but did a poor job. Rolling them up would make quick work of the task 😄

      Same here! I love when a recipe uses simple, basic ingredients. Nothing more frustrating than buying a 6oz bottle of something for a 1/2 tsp 🤣

      @@GeoffreyAlan tip: get a container of orange juice concentrate to keep in the freezer. I use it for salad dressings, and then re-seal what I don't use-- you get the same flavour without the waste.

    These videos are giving me great ideas for adding more veggies to my diet. I don't plan on becoming vegan but I do think most of what I eat should be vegetables and I'm trying to make that happen. Thank you, can't wait to see what else you come up with!

      I’ve never heard of this before (had to Google). I don’t eat mayonnaise, so I’d be a bad person to make this 😅
