I made the tacos after your 20 minute meals video. They are amazing! And the pesto.. wow it’s really good! I make it quite often, I like to air fry potatoes and dip them in it. Even my husband likes it, and he has baby mouth🤣
I made sweet potato with chickpeas and replaced the coconut yoghurt with cashew cream, since in our country there is no such thing on the shelves. It turned out very tasty and my mother liked it too. I love sharing with my family and friends what I like. and now you are my provider in the kitchen... haha

I just want to say as today is super bowl sunday (and I don't care who wins) but in the spirit of the game made the buffalo chickpea quesadillas and although I forgot the green onions must admit the sauce is always on point!!! I used a salsa I got from the farmer's market so it was extra fresh! Love all of Nisha's recipes and am excited to share them with my family during Lent as it is no meat time!!

These all look so amazing...I've been looking for recipes for my youngest daughter (vegan for over a decade) who I just dropped off at law school 1000 miles away :( and now she has to learn to cook for herself while starting law school! I stocked her pantry, fridge and freezer to the gills, I mean REALLY stocked, including dozens of cans of beans from Costco, and I'm thinking these chickpea recipes will be perfect! So far she has made pots of rice and pots of pasta 😅but I'm going to TRY to get her to watch some Rainbow Plant Life... I have tried many many of the recipes and never been disappointed, and I think these (and others) lend themselves to a young inexperienced cook. She also shares Nisha's tastes, thus we got her and entire bag of garlic heads and much spice ;). Keeping my fingers crossed she will take the time to watch some RPL videos!

I made a buffalo chickpea wrap with the spicy cilantro pesto and then chopped up some fresh veggies (red leaf lettuce, red bell peppers and purple cabbage) for freshness and crunch. It was soooooo Amazing!!!

I was skeptical when I first made the 'tuna' salad because it didn't taste very good at first. I'm not sure if my celery seeds have gotten more bitter as they've aged or if I need to use less celery seeds for my personal taste. But, I added a pinch of sugar to cut the bitterness and left it in the fridge overnight. The next day it tasted so good! It was just a matter of letting all the flavors marinate

Cook tip : If you want smooth Pesto, blend the ingredients separately, then puree them together with the olive oil, that's how Italians chefs make pesto in a Blender smooth like the original recipe made with a mortier. (and it leak flavor more :)
Your instructions are so easy to follow, my tandoori chickpea stuffed sweet potatoes came out great! I need to work on draining the cucumbers, my yogurt came out water 😅😅but it still taste delicious!

My favorite vegetarian lunch place closed years ago. But… you just gave me the recipe for the “tuna salad sandwich ❤ They served it on a nutty yummy whole wheat seeded bread and had mashed avocado. There was cheese on it but everything else was vegan. ( I’m not a vegan. I eat 80 plant based food most days. Fish and chicken on meat days) They grilled the sandwich… so good! Chickpeas have become my go to protein for quick make ahead meals. Thanks you!!!

I make 1 kilo of chickpeas and freeze it in jars, could you please tell me how many grams is in a can? 3. We love your Dal! I did you're chili a few times now and I have to say it is really great! Thank you for the recipe. Because of this I really got more into Mexican cuisine. My only change in the recipe is that I don't add smoked paprika powder but the regular one. Because of the Ancho and the Chipotle, it's a bit overkill on the smoke for me. If you like you can try it.

You could use (plantbased) yogurt
Regular can size is usually 400gr including liqued. Drained weight usually around 240gr.

I used my instant pot and cooked up some chickpeas and put in a bowl in the fridge so I always have some on hand.
