The toast recipe reminded me of beryl shwerersky. Her channel taught me sweet sour spice and salty can be played with a lot more. Also, home grown potatoes slap as chips& its hard to fuck up growing them. Your extra potatoes can last about 5/6 months in the dark

The reason there's the debate about whether a tomato is a fruit or a vegetable is because "fruit" is its botanical classification and vegetable is its culinary classification. We pretty much never use botanical classifications in cooking. "Vegetable" isn't a botanical classification at all. Pumpkins and zuchinni are also technically fruits. Watermelon, avocado, bannas and cucumbers are technically berries but strawberries, raspberries and blackberries AREN'T berries. So, yeah, botanical classifications are relatively useless in the context of cooking.

Sometimes my mother buys bulk red potatoes because they are on sale but that’s usually like a 30 lbs bag and we would share them with relatives. And potatoes keep for a long time as long as you store them well so it could be doable.
Smoked salt is I think a nice way to add something to homemade ketchup. Also blistering in-season tomatoes and a shallot on the bbq to blitz to a paste. The best french fries I ever had were from Trencherman years ago (no longer there, or at least not under the same ownership) in Chicago. They were more like wedges, but there was blanching, freezing, double frying and other chef secrets involved. All I know is that they were unbelievable. Beyond potato. Really the best thing in the whole meal which was already great.
Cheese and Jam is a very traditional food in france. We also eat fois gras with jams ! We don't eat cheeses with any jam tho, most of the time it's gonna be a black cherry jam, onion jam or even apricot jam ! And its also the case with cheese : you dont eat camember with jam, that would be gross... Sharp cheeses go very well with super sweet jams, while softer milder cheeses like goat cheese go better with spicy/sour tastes ! (Some people in the northern regions eat munster like cheese by diping them in coffee in the morning too)
