ELOTE | the best Mexican street corn recipe!

  • Elote (Mexican street corn) is by far one of my favorite Mexican side dishes! Juicy, charred corn on the cob gets slathered with a limey mayo spread, then it's topped with cotija cheese, chili powder, and fresh cilantro. Yum!!
    I love classic grilled corn on the cob, but elote is next level. It's got so much flavor with just a few simple ingredients and is such a joy to eat on a sunny day - especially when you're in Mexico!
    But if you're not in Mexico, you can easily make elote at home at your next outdoor fiesta, barbecue, or Cinco de Mayo party. Just toss some corn cobs on the grill, whip up the creamy mayo sauce, and then add a few toppings. Your crowd will go head over heels for it!

    Actually elotes are more a winter food 😅 although we can eat it all year long here in Mexico, also mostly used is white corn; I've never seen that cilantro goes into an Elote not because it can't be kept fresh but because it's not for elote (that's for menudo and birria 🤭) but they do boil them with epazote. Another variance of this is called chascas in Aguascalientes, the difference is they don't eat the "broth" left after they cook the elotes at all (esquite does stay in the "broth" it was cooked and they can serve it with or without it), chascas are usually cooked with different things after boiling and that gives the different flavorings like chorizo, mushrooms, herbs, super spicy and other things they come up with hehe
    Still this looks like a good variance of elote 👍

    You can also boil the corn. I actually perfer it this way. 😋 This is how the elotero guys make it in SoCal. They also drizzle the squeezable butter. It's not clean butter, but it's so yummy!

      Yes, boiling corn is one way to do it if you don't have a grill!

    I watched this, and gave me the confidence to try at home. We cut the corn off the cob, and mixed it all together, so more like the esquites, but definitely used your lime hint - in the sauce, added at the end, etc. Not too shabby. I still prefer going to the hole in the wall shack in Freeport (Texas) but was able to do this myself. A nice side to our beef fajitas.

    Wow! This elote recipe sounds delicious! I'll try to replicate it with a mix of parmesan and pecolino cheese because I can't find Mexican cheese here in Italy 😋😋

    I love the cup idea! You can alway grill it and get the kernels off the cob after and add the sauces and everything :p. I had it in a Mexican restaurant in Naples recently but they only added cotija cheese. It was still delicious. :). Can't wait to try this!

    Love this recipe! Although I’ll admit that I only used some frozen corn and layered in a cup like the street vendor did. It was delicious. Next time I cook a big family meal I’ll grill corn on the cob first.

    Lady, you roll the elote on the crumbled cheese, making sure you press a little to make sure the cheese adheres to the elote. The best adherent is crème cheese and it is the best flavor.

    I made this before I went dairy free! I miss this so much!! Is there any way to do this dairy free? (I’m also gF, sugar free).

      This one needs the cheese to make it "elote". But you can absolutely use lime juice and chili powder as a topping!
