The salads look great, I’m going to make the chicken mango curry today. Tip: Dressed salads may actually not keep that well in the fridge. They will not go bad, but will turn slimy/watery in very quickly, especially if there’s a cucumber in it. Chop them up and make the dressing ahead of time, but just don’t mix them, and just dress them before consuming:)
Salt your sliced/diced cucumbers with some kosher salt, toss and let drain in a colander for 30 minutes before incorporating into your salad. Keeps the cucumbers crunchy for days and avoids that watery slimy issue. Bonus, your cukes will also be perfectly seasoned. This method also works great on tomatoes and any other watery veg you'd like to include in your salad.

I make a Fall Harvest Salad that you roast butternut squash w a drizzle of balsamic. It is delicious and a family favorite. I can’t wait for your Fall recipes n will be sure to try them too. I have your book and love it!
I made all of these for my weekly meal prep twice now, and I am so grateful to you! The mango curry is my favorite and I'm making it a third time for dinner tonight!
Another great video, as ever. About the chickpeas: it's really worth it to go for the fresh ones i.e. not canned. Place 200 gr of "raw" chickpeas in a container full of water overnight. Add a teaspoon of cooking soda into the water. By morning the chickpeas will have doubled in size. Cook them in boiling water for an hour. Once they have softened enough, drain the hot water and shower them with cold water. This will make the exterior cloak start to peel off. Peel it from each chikpea by hand. It may sound like a lot of work but it does make a world of difference in taste.
I made the Mango Curry Chicken Salad, and all I can say is WOW! It really is next level! I want to put that dressing on everything now lol. It’s that good. Thank you so much for putting a unique spin on chicken salad!
Soon to be teacher here, and salads are just the easiest to consume when I’m on break and they fill you up plus I feel like I’m feeding my body decent foods that also taste good. So i’m definitely going to be making all these for my larger sides!
I made the 1st salad. It was good at first, but after letting it set overnight in the refrigerator, it turned into a watery mess. I do not recommend it for meal prep, but I do recommend it if it's going to be eaten right away.

I never thought I 'd miss cooking so much. I close on a house near my new work next week. I think I'll make the chick pea salad mason jar salad style as my first packed lunch.
Made the shrimp salad and chic pea, but yum! Used half plain Greek yogurt instead of sour cream since that’s what I had. The left over dressing is going to be so good on tune or egg salad I decided!

My mother use to make a chicken curry salad back in the 70s, but I haven’t been able to find it anywhere. It didn’t have mango in it, but it sounds like a tasty addition. I like to do things like this for potlucks with our church group.
@rneustel388 Was it by any chance 'Coronation Chicken'? That was popular in the 70s, developed for Queen Elizabeth's Coronation in 1952. Mango chutney instead of mango or apricots and sultanas?
@@allannicol199I had to look up what coronation chicken was as I’m from ‘across the pond.’ The recipe that my mother used didn’t have any fruit in it, as far as I can remember, but I think that it had almonds in some form. It was served cold, of course. I’ll have to see if I can’t get the recipe from a cousin. It was really good, especially in the summer. If I can find it, I’ll answer back, if you’re interested.
I really like the shrimp cucumber salad. However I need to only keep the shrimp in the fridge for no more than 2 days. If you have a tendancy for allergic reactions the older the seafood the more likely you are to have a reaction. Great recipes. I think i will use all of these salads but will make them on the same day i will be eating them. You give great instuctions. Thanks for sharing your skills and recipes.

Lisa, lOVE these recipes. They have been my go to this summer. Making another double batch of shrimp salad today! I couldn't keep the curry mango chicken salad in the house. Resorted to using pre-chopped mango because, girl, it is HARD to cut mangos! I couldn't get anything to come off the skin and they are oh, so slippery!
Lisa those look delicious. My favorite way to peal a mango is to cut off the sides then use a glass. Put the flesh inside the glass and the skin on the outside. Push down and let the glass do the work.
I love the meal prep meals, definitely keep making those 🫶 Maybe next you can make a couple of pasta salads that you can make ahead and that last in the fridge for days. Could be a mix 3 with meat and 3 vegetarian, that would be great! 👍 😊

For the last salad, try adding sumac as well. It will be better after a day, but also works the same day. you can even leave out the dressing and use sumac only. you will just need more of it. 2-3 theespoons should work for that amount.

These salads are great Meal prep for picnics, or outdoor concerts. We stay a weeklong in a time share. There’s a kitchen there, but it’s kind of small. I’d like meal prep recipes for taking veggies and fruit precut and then just quickly put meals together there. There’s an outdoor grill and a small oven. Last year I took my instant pot. But I don’t want to carry so many items with me.
Oh my goodness! I've never been a big fan of chickpeas, but I love Mediterranean dishes so I thought I'd give it a shot just to see how it goes... I am in love! I did only use one can of chick peas though and I had maybe 4 kalamata olives that I chopped up and put in there. Oh, and I also put a little bit of Italian seasoning in the dressing. I think the dressing is my favorite part! This is so good and I'm definitely telling everyone that I think will like it! Thank you.

Loving this theme, your six easy Chicken marinades is now my weekly Bible, I make a batch of 2 or 3 flavours and keep them frozen. That way I can always whip this out in a flash, and everyone that has tasted it has said how delicious it is. I'd love to see other similar themes, that can be batch made and alternate through the week❤❤❤
I make a very similar salad to the last one only I add red wine vinegar and couscous. It is my absolute favorite summer staple in my fridge especially when the garden is producing🤤
Just made the chicken salad, slightly different because I forgot to buy half of everything, but it turned out absolutely fantastic anyway 😀 the celery really gives the kick to it. Love it!! ❤️
I’m glad I saw a NYTimes video about poaching that said to heavily salt the water prior to cooking the shrimp. I’ll use even more salt next time. I made the shrimp cucumber.

I always thought you couldn’t save onion once cut 😮 now I know how I can without wasting. We normally only buy if we plan on using it all but that doesn’t always happen so now I know how to save for another recipe or food for another day. Thank you
I swear I lived on meal-prepped chickpea salads when I lived in Seoul. It was so hot during the summer and the salad was refreshing and light enough to not make me feel like I needed a nap after lunch
I gotta say... I'm not a big fan of veggies because we never really ate them at my house growing up, so I've been trying to look for recipes to incorporate them on our family meals. When I saw your video a while ago... the chickepea salad looked interesting just because you said it was a favorite... but I wasn't fully convinced lol, FINALLY I made it today... I always appreciate your meal prep ideas! When I make meal prep salads, I cut cabbage, lettuce and carrots, but never cherry tomatoes and cucumber because it makes the salad watery. And, I'm not sure about you, but if I ever dress the salad, it's only for 24 hours. Furthermore, the salad caused stomach ache, especially if it contains homemade mayo.

Oh my goodness! I've never been a big fan of chickpeas, but I love Mediterranean dishes so I thought I'd give it a shot just to see how it goes... I am in love! I did only use one can of chick peas though and I had maybe 4 kalamata olives that I chopped up and put in there. Oh, and I also put a little bit of Italian seasoning in the dressing. I think the dressing is my favorite part!

Loving this theme, your six easy Chicken marinades is now my weekly Bible, I make a batch of 2 or 3 flavours and keep them frozen. That way I can always whip this out in a flash, and everyone that has tasted it has said how delicious it is.
I'd love to see other similar themes, that can be batch made and alternate through the week❤❤❤

I make a very similar salad to the last one only I add red wine vinegar and couscous. It is my absolute favorite summer staple in my fridge especially when the garden is producing🤤
Just made the chicken salad, slightly different because I forgot to buy half of everything, but it turned out absolutely fantastic anyway 😀 the celery really gives the kick to it. Love it!! ❤️
I’m glad I saw a NYTimes video about poaching that said to heavily salt the water prior to cooking the shrimp. I’ll use even more salt next time. I made the shrimp cucumber.

I swear I lived on meal-prepped chickpea salads when I lived in Seoul. It was so hot during the summer and the salad was refreshing and light enough to not make me feel like I needed a nap after lunch

I gotta say... I'm not a big fan of veggies because we never really ate them at my house growing up, so I've been trying to look for recipes to incorporate them on our family meals. When I saw your video a while ago... the chickepea salad looked interesting just because you said it was a favorite... but I wasn't fully convinced lol, FINALLY I made it today... OMG it is delicious!!!! I honestly thought I wasn't gonna like it, but boy was I wrong!!! I'm excited to try more of your veggie recipes. THANK YOU!

I always appreciate your meal prep ideas! When I make meal prep salads, I cut cabbage, lettuce and carrots, but never cherry tomatoes and cucumber because it makes the salad watery. And, I'm not sure about you, but if I ever dress the salad, it's only for 24 hours. Furthermore, the salad caused stomach ache, especially if it contains homemade mayo.
I haven't had any issues with these salads as I've eaten them up to the 4th day! But everyone has different sensitives to certain ingredients.
