I guarantee you that all the trim and bones gets repourposed but the money is in the fillet they are not throwing it away. Talking about waste, every one of you goes to the grocery store and will only buy perfect center cut fillets with zero blood line or belly fat, how do you think it gets that way? These guys may go through 50-60 plus fish in a day and its difficult to be razor precise when you're filleting in bulk. It's probably not worth the time lost to the amount of meat saved.

Top loin is prized for sushi and sashimi it is very similar to yellowfin tuna in taste and texture and the bottom loin is mainly grilled as it is a more fat heavy piece lots of oil and great grilled almost similar to grilled swordfish in texture ... This cutter did a good job contrary to the belief in these comments but interestingly he cut the fish in half a way that doesn't make sense normally you see this fish separated down the lateral line as the two loins r very different

A lot of wastage there, but if you really want to see waste that is literally bordering upon criminality the UK government has that literally sewn up, due to their risible fish quoters. The amount of landed fish that is actually thrown back into the ocean simply because of these ridiculous quoters is absolutely insane!
