I fished with Northwest Charters last year in Homer and they had a woman that filleted fish for them. I don't think it was the same girl, but she was a surgeon with the knife. I must have watched and talked to her for an hour. She said she grew up there and had been doing it since she was a kid. She said she probably would be lost trying to fillet a bass or crappie, but didn't miss a piece of meat on halibut or cod.
Always a pleasure to watch a skilled worker do their thing male or female. That lady is very handy with her filleting knife. She seems very happy to please great vid.

Ive watched professional chefs on tv struggle to filet a halibut, this woman is a machine, shes phenomenal and shes doing it with such nonchalance as shes talking to people its like a walk in the park,this is a great video, thank you....from the uk
She reminds me of the ancient tradition of a UK East Coast 'fish wife', or 'fish wifie" in the Scottish dialect. They had a fierce reputation in my mother's home town of Arbroath. Some women even followed the herring fleet as the fish migrated along the coast, going from town to town. Great skills. Great attitude. Very much appreciated.

I lived in Anchorage Alaska for 24 years. I am now 70 years old, a little old lady, I'm just 5'1 tall. I loved to go out fishing from Kenai, sorry halibut and snapper. I caught a little halibut, it was 40 pounds. You just follow the lines on the skin, down to the spine and then slice along the bones. You don't have to clean out the guts, it all stays inside the stomach. You have to remember to cut out the cheeks, that is a real delicacy. My favorite recipe is halibut Olympia, like you could order at Simon and Seaforts. She's really good. You could see her carve out the cheeks around 7:35 or so. She's doing it the same way I did. At the Military Morale, Recreation and Welfare, I got the same kind of attention from the soldiers and airmen in the fish shed. Some guys think that they are the only ones who can do this. My husband got physically ill when he tried to clean a salmon from the Russian River. I always had to clean the fish!

I was a chef/short order cook for 30 years and you had to be good with a knife. I'd certainly agree with most comments here that her knife skills are very remarkable indeed. She can filet my fish any time.....I like catching and eating, not so much cleaning them. Nice haul of fresh Halibut must have been fun catching them.

Wow, you can tell she's done this a few times! LOL I have a great deal of respect for a woman who can handle a SHARP blade, and the way she honed it on the steel, very skilled! A woman who knows the value of a sharp blade is a good woman in my books! A dull knife is of little value, and you can't do what she is doing with a mediocre edge!
I used to work in a fish shop. Sister did the halibut and I did the salmon. Fresh salmon smelted so good. Like fresh watermelon. 😊 Anyone can do this. Practice and a very sharp good knife. 😊

To put this in perspective, halibut are the EASIEST fish to fillet in the world. Once you’ve done one or two you’ll be just as fast as this lady. We usually let the grandkids do the halibut, they’re that easy to clean. And don’t forget the cheeks!! A bit of charter fishing advice for anyone coming up to visit…. Always have the deckhand filet your halibut but NEVER let them fillet your salmon. Tell them you only want your salmon gutted. You’ll lose about 25% of the meat if you let them fillet your salmon because they’re more concerned with speed than getting the maximum amount of meat.
Other then one of my sons, I have never let the charter deckhands filet my fish, period. They tend to leave more meat behind then I ever would and that just pisses me off so I do it myself.🙂

At the Military Morale, Recreation and Welfare, I got the same kind of attention from the soldiers and airmen in the fish shed. Some guys think that they are the only ones who can do this. My husband got physically ill when he tried to clean a salmon from the Russian River. I always had to clean the fish!

I was a chef/short order cook for 30 years and you had to be good with a knife. I'd certainly agree with most comments here that her knife skills are very remarkable indeed. She can filet my fish any time.....I like catching and eating, not so much cleaning them. Nice haul of fresh Halibut must have been fun catching them.

I've got a picture with my catches of the day from a Homer charter from back in 1990 when I was 21 years old. I caught two whoopers that day. One was 221 pounds and the other was 172 pounds. I'm standing between them and they are both the size of a residential door.
I went out of Homer when I was younger, first time I ever saw a bald eagle. I also remember pulling those trucks off the sea floor and being WORN OUT!

A good few years ago my nan worked at ross fisheries in Aberdeen i went to visit her at work and was amazed to see whole rows of little old ladys filling fish so fast it blink and you miss it amazing knife skills while chatting away with her workmates

Wow, you can tell she's done this a few times! LOL I have a great deal of respect for a woman who can handle a SHARP blade, and the way she honed it on the steel, very skilled! A woman who knows the value of a sharp blade is a good woman in my books! A dull knife is of little value, and you can't do what she is doing with a mediocre edge!
I used to work in a fish shop. Sister did the halibut and I did the salmon. Fresh salmon smelted so good. Like fresh watermelon. 😊 Anyone can do this. Practice and a very sharp good knife. 😊

To put this in perspective, halibut are the EASIEST fish to fillet in the world. Once you’ve done one or two you’ll be just as fast as this lady. We usually let the grandkids do the halibut, they’re that easy to clean. And don’t forget the cheeks!!
A bit of charter fishing advice for anyone coming up to visit….
Always have the deckhand filet your halibut but NEVER let them fillet your salmon. Tell them you only want your salmon gutted. You’ll lose about 25% of the meat if you let them fillet your salmon because they’re more concerned with speed than getting the maximum amount of meat.
Give her some big Red Snapper to slow her down! I like cleaning Speckled Trout, they are easy too.
She is impressive though.
I beg to differ with you sir…there are numerous species that are easier to filet than a flat fish.

Not up here there isn’t. And not among the many fresh and salt water fish I’ve caught over the decades.
Other then one of my sons, I have never let the charter deckhands filet my fish, period. They tend to leave more meat behind then I ever would and that just pisses me off so I do it myself.🙂

She’s like a machine! First, the precious cheeks come off, then the fillets on both sides with zero waste. All the while, barely looking at what she’s doing and talking to the people as if she’s just talking about the weather. Amazing.

45 seconds just counting in my head that’s what we do , fletchers, consistency with repetition makes a great fletcher, we used to do that 12 hours a day in the factory. I’ll always miss Homer , but Hawaiis not bad.
