5 Cheap Dinner Ideas | Kosher and Gluten Free | Orthodox Jewish Mom (Jar of Fireflies)

  • Today I am taking you along as I cook dinner all week for my family. Each meal I made for as inexpensive as possible so cheap dinner ideas are here! Each meal is kosher and gluten free. Here are the recipes from my week of cheap kosher and gluten free dinner ideas:
    ****************
    Unnamed Chicken Dinner
    2 tbsp olive oil $0.151 package chicken breast $101 shallot, chopped $0.702 garlic cloves, crushed and chopped $0.302 tbsp tomato paste $0.102 tbsp GF flour $0.102 tsp sweet paprika $0.20
    2 cups Chicken Broth $1.301 can mushrooms $1.50Chopped fresh chives, to serve Mashed potato, to serve $1.50
    Roasted broccoli to serve $1.50
    Heat 1 tbs oil in a large non-stick frying pan over medium heat. Cut chicken into serving size pieces and slice in half if too thick. Add 1 tbs oil to pan. Cook the chicken for 3 minutes each side or until well browned. Transfer to a plate. Cook garlic and shallot then add in tomato paste, flour and paprika. Mix. Add the stock a little at a time, stirring to combine evenly after each addition. Bring to the boil and let simmer for a few minutes. Add the chicken to the liquid and flip to coat. Simmer for a few minutes before serving. Serve with mashed potato, roasted broccoli

    Tofu Ramen
    12-15 ounces extra firm tofu
    4 eggs
    1/2 ounces dried shiitake mushrooms
    4 cups chicken stock
    4 squares ramen noodles
    Canola oil
    Gf flour
    Press moisture out of the tofu then cut into cubes. Coat cubes with gf flour. In a skillet, fry tofu in oil. Remove from pan and set aside. In the same pan, add the chopped shiitake and stir fry until golden brown. Add the stock and bring to a simmer. Add noodles and mushrooms and cook per package instructions. Hard boil the eggs. Divide the noodles into four large bowl and ladle the soup on top. For each serving, top with the tofu and 1egg (cut in half)

    Baked Spaghetti
    1 box Spaghetti Pasta $3.00
    1 jar sauce $3.00
    Mozzarella cheese $3.00
    1 package vegan ground beef $5.25
    Italian seasoning $0.10
    Baby spinach $2.30
    Cook spaghetti per package instructions. Cook vegan meat per instructions. Chop spinach. Place noodles in a large bowl and add all other ingredients and mix. Place the noodle mixture in a baking dish. Bake for 20 minutes on 350.
    ***************
    Cornbread Chili Casserole
    Cornbread mix $2.70
    3/4 cup Soy milk $.35
    1/2 cup oil $0.45
    1 egg $0.05
    1 package ground beef $11.30
    1/4 tub vegan sour cream $0.75
    1 can corn $0.70
    1 onion $0.60
    Taco seasoning $0.15
    1 can chopped tomatoes $0.60
    1 can beans (pinto) $1.00
    Cook ground beef, drain and rinse, place back in pan. Add vegan sour cream, corn, taco seasoning, tomatoes and beans, mix. Place in casserole dish. Prepare cornbread according to box. Place batter evenly on top of taco mixture. Bake according to cornbread box instructions
    ***************
    Bean and cheese burritos
    Tortillas $.50
    Shredded cheese $2.00
    Pinto beans $1.80
    1/4 cup Salsa plus more to serve $1.00
    sour cream plus more to serve $1.00
    Guacamole to serve $0.70
    Prepare tortillas by lightly heating up in skillet, set aside. Rinse the beans. In a blender, mix beans, salsa and cream cheese. Put beans and cheese in the tortillas, wrap them, and place in baking dish
    Bake at 350 for 15 minutes. Serve with sour cream, sliced avocado, and salsa

      Hello! Herb pasta, boulion pasta (we have it with some small bits of bacon, too). Mushroom pasta, Hawaiian rice. Zucchini pasta. All the pasta dishes, basically ;)

      Kielbasa Sausage with diced sweet potatoes and zucchini all cooked in a skillet with some spices of your choice. I prefer S&P and Paprika. It's simple, healthy, and quick. One of my favorites.

    You could make your own breadcrumbs. Maybe throw left over challa in a bag in the freezer and when you get enough, dry it in the oven on low heat then grind or crush it in a bag. Might be worth setting aside a loaf for crumbs as well. Seems like it would be cheaper but I'm not sure. I do this with my homemade bread and no one in my house has any idea.

    Hello again! There is a broth called dashi stock (Japanese) that is easy to make and is 100% vegan. The one I make is a cheaper version contains two ingredients, water and kombu. (Here on youtube there are other variants.) I put the combo in the water and leave it overnight (12 hours), then it is ready. I use this when I cook beans or chickpeas, to get the umami taste and so that I don'tt become queen fart a lot.

    We eat a lot of fresh vegetables, so my meals are not too affected by the increase in prices overall. This evening I'm cooking roast chicken with broccoli, cauliflower, carrots, green beans and roast potatoes. The remaining chicken will be used for lunch tomorrow and a soup with the leftover veg which will be served with bread rolls for another evening meal. I don't like wasting food so have lots of ideas for using leftovers. I'm grateful that my daughter loves vegetables and salads because they are so healthy. I've noticed that gluten free food items are incredibly expensive. Here, vouchers are provided to parents of Celiac children to enable them to reduce costs. Those with very low incomes can get these foods for free. I wish the American authorities would provide similar assistance to its citizens.

    Thank you for sharing your meal ideas, loved the addition of the spinach to the baked spaghetti casserole. When my daughter was little I’d make my pasta sauce with tomato sauce and added spinach, carrots, zucchini, onions and garlic in the blender and then added herbs. She loved it!

    I was at Half Priced Books today. I found a Kosher cookbook; I was thinking of you. I wasn't sure if it was gluten free though. I earned $11 from selling back old books. Which ended up helping me at the grocery store. At the laundromat, my new tablet wouldn't start. I was worried. Then I decided it was probably cold from being in the car. When I took it home and plugged it in the charger thing, it worked, thankfully. Dad talked me out of getting anything at Half Priced Books. I found trash bags on sale at the grocery store, and it was cheaper than buying the same thing on Amazon. You have a good day.

    What a lot of preparation it took and it was really well executed.👍🏻
    Helpful to see the ingredients list and cost for each recipe.
    My favourite, which I will try pretty soon, is the baked spaghetti.
    My kids, when they were your kids ages, loved mac n cheese and I used to put corn, broccoli and cauliflower in there and serve as a side dish or have as a lunch.

    These were wonderful! Great ideas. I live in a gluten/dairy free household and all these ideas would be great. Especially the Ramen! I never thought about frying tofu. So easy. I bet I could even get my sometimes picky 4 year old to eat it :)

      Oh fried tofu is my kids favorite! We also serve fried tofu with rice and sauces (everyone picks something different lol but like teriyaki or sweet chili sauce or something like that)

    Yum! I make the chili cornbread casserole too. I put cheddar cheese too. You might use fake beef to be able to add cheese too. It’s a staple for us! Everyone loves it. Great video as always Chana!

    That chicken dish looked very tasty, I need to try that one! I have been making baked spaghetti or a variation of for years, always a crowd pleaser! One of my favorite inexpensive meals is baked potatoes with cheese and broccoli, yum! Combine any cheese sauce with cooked or roasted broccoli, heat through and pour over baked potatoes, so easy! As always, a pleasure to to watch and learn...

    Ohhhh, they all look amazing! Prices definitely going up for food. What I love is to add corn starch if I fry things (like tofu) or these thin eggplants cut in bite size pieces. It makes them crunchy and even my picky eaters love it. I think my most favourite inexpensive dinner is both vegetarian corn soup and mapo tofu (I use either beef or Turkey minced meat but you can make it vegetarian to begin with.) lovely video as always🤍

    Dear Channah, thank you for yet another video to accompany my evening tea!
    As a housewife on food restrictions (Muslim living in Switzerland- meat has to be halal and we have no halal butchers nearby so we have to cross borders and buy in bulks in Germany, I am lactose intolerant and have irritable bowel syndrome so I eat at home) and also a budget, I feel ya. I can share little tips for anyone who wants to eat better but has to spend less on it.
    One thing that I do is always plan ahead. I write out a weekly meal plan every Sunday. I tape it on my fridge. I also write what is missing in my fridge/pantry and shop accordingly weekly. It also creates less clutter in my fridge/ pantry, ensures that I use everything that I have, prevents me to overbuy.
    Usually I spend around 50-60 Francs every week on groceries. (1 USD= 0.92 Francs) When I first arrived, I'd spend around 150. What I did was to stop buying the instant or ready to eat ingredients and focus on the basic ones. For example, a package of cornmeal for cornbread can produce 3-4 cornbreads. But a cornbread mix only produces one. Same goes for any basic ingredient: I do not buy canned beans. I buy dried ones. If 250 gr of a canned bean is around 2 francs, 500 gr of dried one is the same price and I can make 2 full meals with it. I wet them a night before, cook the entire package in pressure cooker for an hour and use the half, freeze the other half. It goes anything that is a grain: Lentils, beans, chickpeas etc. I always have bags of cooked grain in my freezer. I started this after accidentally buying a can of lentils with bacon in it. You find animal products in most random places even in bread. Sometimes they use lard in them which is bizarre for my Middle Eastern upbringing.
    I buy vegetables that are in the season and eat them only when they are in season. It is cheaper and also I believe that God created them in a specific season for a reason. So in winter, we have plenty of cabbage, brussel sprout, broccoli, cauliflower, spinach and leek dishes. In the summer we would have zucchini, green bean, corn, aubergines, green pepper; In spring peas, asparagus..; In autumn pumpkin, celeries, turnips, kale etc etc.. So many colourful, different food we can have every season we are blessed.
    What I also like to do is to have weekly routines of food preparations. I never buy soup stock. Anyone that has a pressure cooker can make their own. Usually every Monday I put out a whole chicken and some beef bones, as I go around the house, it gets cooked. The stock is stored separately in tupperwares. Usually I get around 6 litres of stock which lasts me a week. I shred the entire cooked chicken and use it as salad toppings or in soups, burritos etc. I also make my own cashew butter, peanut butter, oat milk, soy milk, coconut milk, green pesto sauce and guacamole because the cost of buying these are higher. Every summer when tomatoes are plenty, I buy in kilos and produce around 100 jars of diced tomatoes, 5 jars of ketchup and 5 kg of tomato paste. Not much is needed, only food processor and a large stewpot. It is done only once a year and lasts me until next summer. For example if I need salsa, I can just pull out my homemade diced tomato jar and add simple ingredients and be done with it. No need to buy extra anything. If I want pudding, I just need some cocoa powder, avocado, melted dark chocolate bar and mix them in a blender. If I have a kid around, I might add a spoon of agave syrup. No need to buy the packaged pudding and play the guessing game of "will I feel sick after eating these?"
    It might seem like a lot of work but once you get the hang of it you won't like the store bought ones. Homemade can be adapted to your own individual needs and taste while you are 100% sure about the ingredients. After all, the trouble I have is not purely financial. Any packaged product can cause me to have an unwanted reaction. I have to be extra careful with labels. What I can say is that most of the things I mentioned are simple to make at home. You don't need fancy tools. Pressure cooker, blender, food processor, large pot is all there is needed.

    Baked spaghetti is a favorite of our family! I am going to try the cornbread chili and chicken recipes. They looked delicious. I will say watching this video made me hungry! Lol
    I am a fairly frugal when it comes to meal costs. I buy my meat in larger packages and divide them and put them in the freezer. I either eat the leftovers for lunch or freeze them (if enough to do so for another meal or for “ potluck “ meal day.) Have a great week! Blessings!

    There must be a meal prepping in the air, because quite a few of my family and friends are prepping for future meals and I myself have made three pans of meatloaf, four pans stuffed peppers, and three pans of lasagna, and there's only three of us in the house, once I get down through three or four of those pans I will be making chili and enchiladas for meal prep in the future, I think it's a great idea Chana keep it up

    Great video Chana! I will definitely make the spaghetti bake. I was happy to see carb free pasta! My diet is low carb so I stay away from gluten. I made eggplant parm last night. It takes a bit of time but well worth it. I used coconut and almond flour for dredging. How nice of you to take the time to do a video about inexpensive meals. Very timely! It was obvious that you put a lot of work into breaking everything down for us. Looking forward to your next creative video! 💕

    Hi Channah🙋‍♀️ your burritos is actually ancheladas. I make them once in awhile with cheese inside and speghetti sauce outside and cheese.
    Burritos are with aprotien. Usually: rice ,veggies , corn , beans and sauces...wrapped lije a big egg roll. Yumm a meal in it's own.. all look soo yummy.. enjoy

    Loved the economy meals. I use the Morningstar crumbles to make tacos. Add cheese, taco seasoning mix to crumbles, lettuce and anything I enjoy in a taco. Wrap it in a corn tortilla and my favorite tacos. Not much of a tofu lover but am going to fry it and see if that changes my mind. Also love a vegetarian lasagna, very similar to spaghetti casserole. Keep those meals coming.

    Here’s a hack I do to extend our ground beef and sneak in veggies. It saves money and ups the nutrition.
    Cook ground beef as usual, when just about done toss in a bag of frozen cauliflower rice and take a package of mushrooms, run them through your food processor so they’re diced up super fine and add that too. Cook until it all comes together and you won’t even be able to tell! Season as you like it. It stretches one pound into two and you get veggies! 🥳
