    I make this using butter milk instead of regular milk. No need to add lemon juice etc. cook over gentle heat til it separates, drain well. Add herbs and spices and cream. Much easier.

    We dont have all these herbs in Pakistan but believe we can use some locally available and also according to local taste. Parsely is hardly found here nor is the taste familiar to indiginous population of this region.

    After the cheese is strained thru a kitchen towel that liquid I think it's called whey anybody know uses for it

    My milk carton says, UHT recombined milk. Is that the same as UHT? Can I still use it to make cheese? I've ran out of mostly everything due to the restrictions. (My village shop only sells flour, milk, eggs etc, basic stuff)

    I am new to cheese making, but it seems like the videos for basic cheeses (ricotta, mozzarella) are all nearly identical. So far, I have watched three videos on making Boursin, and the ingredients and processes are all COMPLETELY different. I plan to try all of them, but I have to assume the results will be quite different.

    I never saw someone putting yoghurt in the milk with the lemon and vinegar to make cream cheese. Is there a specific reason why you make it this way? Or is it more for the taste?

    About how long do you heat it up waiting for the curds to separate from the whey? I was at that step & I never got the yellow watery whey to separate. 😔 I've made ricotta from whole milk & lemon juice/vinegar before & it turned out great! But this isn't working for me.

      Nevermind! It worked! I just had to heat it up longer, about 10 min in med heat! 😂

    Boursin is a french cheese and it's a double-creamcheese with french herbs und garlic.
    I'm wondering, why you don't use cream cheese (adding cream and sour cream/ crème fraîche) for this recepe. It would be easyer and it would take less time. And please: use fresh herbs if possible. You will love it!

      I suppose that mixing together bought cream cheese with bought creme fraiche with herbs is not the same as making your own cream cheese. Quicker, yes. But not homemade.

      Yes, but I recommend using whole milk for this cheese. A cheese made with low fat milk tends to be less softer and less creamier than that made with whole milk.

    Either Lemon juice or Venigar is enough to coagulate the milk, isn't it? Then why did you use both the ingredients plus yogurt also?

      Does nut milk even react the same way when the lemon and vinegar are added? I can't imagine it actually separating into curds and whey like regular dairy does.

    This isn't cream cheese; it's ricotta. Whole milk doesn't have enough dairy fat in it to produce cream cheese. Also, if it only drained for an hour, then the moisture content is too high to be cream cheese.
