I make cheese and I am a vegetarian and so use only microbial rennet, but while I learned that you can use thistles to make rennet, I never knew HOW to extract the compounds or even from what part of the thistle the rennet was made. Omg I planted milk thistle this summer I got soooooo many flowers and they finally died because last 4-5 days weather in 30s 20s . Smells amazing, beautiful leaves and bees love them 😁 I got ton of dry flowers now I know what to do with them 😁 Grazie 🙏🏻🙏🏻🙏🏻

It works with soy milk! I have made tofu and the process is very similar to cheese making. You heat the milk, add curdling agent, wait for the proteins to separate and then scoop the curds into a mould. Peas work too but they contain more starch than soybeans so you need to filter it out, otherwise the tofu texture will be pasty. I have no idea about oat, it might be tricky to separate all the starch. Mary's Test Kitchen has videos on making tofu from things that are not soybeans if you're interested in that.
