    Here in the US, in New England, settlers have used a weed called "cleavers" (galium aparine) - it's a sticky trailing little plant - if you grab a bundle, crush the leaves and stems a little bit, put it in a net and suspend it in the milk - it will curdle the milk in a short time...it also has medicinal purposes, and can be fed to livestock

    Wow! Many thanks for this video. I make cheese and I am a vegetarian and so use only microbial rennet, but while I learned that you can use thistles to make rennet, I never knew HOW to extract the compounds or even from what part of the thistle the rennet was made. Your video is what we call a "game changer". Thank you.

    Omg I planted milk thistle this summer I got soooooo many flowers and they finally died because last 4-5 days weather in 30s 20s . Smells amazing, beautiful leaves and bees love them 😁 I got ton of dry flowers now I know what to do with them 😁 Grazie 🙏🏻🙏🏻🙏🏻

    That is so neat. Thank you! Thistles do grow in the southern USA but they are not common in my area. I'll try to find some, though.

    Good to know. I normally just gather the stalks to eat like celery. Now I know to save the skin and flowers for more uses.

      It works with soy milk! I have made tofu and the process is very similar to cheese making. You heat the milk, add curdling agent, wait for the proteins to separate and then scoop the curds into a mould. Peas work too but they contain more starch than soybeans so you need to filter it out, otherwise the tofu texture will be pasty. I have no idea about oat, it might be tricky to separate all the starch. Mary's Test Kitchen has videos on making tofu from things that are not soybeans if you're interested in that.

    This is fantastic information! I hear that thistle rennet is not good for making all types of cheese because it has a flavor. What types of cheese can be made with this rennet?

    I use vinegar or lemon juice to make the cheese, what is the difference with rennet?
