I tried doing roast potatoes by parboiling, fluffing up with a teaspoon of cornflour, and putting into oven with only 50% of the tray filled with an absolute ton of oil and seasoned with salt, pepper, garlic granules and it was the best roast potatoes I've ever done. So deeply browned they were crunchy and delicious.
