Make sure to use that Metal fork on the teflon ladies and gents. I personally enjoy a wee bit of teflon into my omlet's, my naturopath told me it strengthens my immune system. I rarely get sick as a result.

Do you have a recipe using just the eggs whites, no butter? Can you recommend a butter substitute? Butter, cheese and egg yolk is a no-go for me. Thanks!
Just separate your eggs, throw out the yolk, and cook pretty much as above. In some stores you can buy litres of egg whites (looks like a litre milk carton) and that works too, though the protein strings are broken so it doesn't behave quite like an egg white freshly separated. Takes a little getting used to but it works.

I love to make Spanish omelette and for that I have two non stick pans that can lock together for the purpose of tossing upside down and cooking both sides. Great fun! Spanish omelette is SO delicious! Eggs, diced par-boiled potato’s, and pre fried onion - all mixed into a 6 egg omelette. Delicious hot or cold.

Jamie, you are a genius omelette maker. I just did it but added about a tablespoon of tinned evaporated milk to 2 eggs. It came PERFECT, following your fork manoeuvres which I think are essential to cooking the egg to just enough softness! Then added vegan cheddar cheese. I did not need to add salt and pepper and I used a normal stainless steel frying pan. If only there is a way to make a vegan omelette like this! Oh yes, I cooked half an onion until brown before cooking the omelette and then poured the egg mixture on top. I think the caramelized onion adds great flavour to that soft cheesy omelette. Since I struggle to eat breads now, and eatting rice every day was adding too much weight, I make a one-egg omelette (large no.8 egg) every day (for a couple of years now) in our office kitchen for lunch. Usually with red onion, chopped mushroom and some pastrami (cheese too of course). Yum!

Anyway, these tutorials are so helpful, especially for light weights like me. Thirty years on and I’m still doing a rotation of mexican wraps, spaghetti bolognese, shepherds pie, pesto pasta/tuna pasta and Sunday roast for my family. Totally agree, I prefer the omlette slightly firmer and with a lightly toasted crisp to it. Usually make mines with cheese, broken up crispy bacon pieces and cooked diced sausage. Heaven and so easy to make.
You're preference is just that, and it's your own. Jamie's is clearly different, but a lot of recipes are just guidelines that leave room for adjustments (like cooking your eggs a bit more)
Eggs can very quickly turn rubbery if overcooked. Jamie's method makes sure this doesn't happen. If you want yours to have colour AND still be a bit gooey in the inside, you need a smaller frying pan. I don't get why people get all worked up if a recipe doesn't quite give the results they want. Onions make me sick, so I'm more than used to modifying almost every savoury recipe. You take the idea and go wherever you want with it. That's the joy of cooking.

I actually tried flat surfaces and read that edges are the way to go, it's about how you hold it and the way you strike it on the edge. If you're timid about it you'll get shell. If you try to be Conan the barbarian, you'll get shell.

Tip: If you crack eggs on a flat surface instead of the side of a bowl you won't get any shells in the bowl.
+@2L3git2quit This is true. Cracking eggs on sharp edges makes little bits of eggshell more likely to come off. Practicing cracking eggs with one hand method is easier actually and makes this less likely to happen as well.

I actually tried flat surfaces and read that edges are the way to go, it's about how you hold it and the way you strike it on the edge. If you're timid about it you'll get shell. If you try to be Conan the barbarian, you'll get shell.
