I’ve been making roast beef and gravy for many, many years, but decided to do it Jamie’s way this time. OMG! Everything was so delicious. And the gravy - unbelievable depth of flavour! Jamie’s recipes ALWAYS turn out the way they were supposed to. The man is a national treasure isn’t he?
We’ve just got our first house and this is the first Sunday roast I’ll be cooking this weekend. I’ll be using this and a couple of other Jamie’s recipes.

Got a bottom round for Easter roast. Not paying $65- 85 for these cuts at our local grocery store. Highway robbery! Any suggestions for cooking this cut? Never tried before.

I just made this tonight for dinner using a prime rib roast and OMG, it was absolutely AMAZING!!! I have never been able to cook roast this nicely; it was so juicy and delicious, and that gravy, it was amazing. That beef is not cooked properly it's raw! Why do all you chefs think it's good to serve up raw meat!!! Youl kill someone 😛

That looks awesome, love the gravy tips, my meat sucks when i cook at 180C so...... for the meat i sear it and get good colour on it, but then set my oven to between 80-100degC and leave it for about 3-4 hrs. Its cooked thru but blushing beautifully , melt in the mouth and i only have to rest for 10-15mins. I also use this method for beef wellington using cheaper cuts of meat. Works a dream.

I used to work as a banquet chef in the heart of Alberta Beef Country and the way we'd roast beef is char it on the grill (unless it's a prime rib), rub the whole thing with Dijon or Whole Grain mustard, roll it in Montreal Steak Spice and roast at high temp. We used to do 9 prime rib a day for seperate functions. I still remember the night's I'd have to hoist a wooden serving platter with a roast on it onto my shoulder and delicately waltz around the event room carving and serving beef to our guests.
Props to you chef. That sounds like a crazy service!

I love Jamie's recipes. Along with his great personality. You can see he loves his family. ...as they sit together enjoying each other's company.
If you want to avoid lumpy gravy, everything he does is fine, BUT separately, melt a big wad of butter, add your flour to that. It not only cooks the flour a bit (which gets rid of any doughy taste) but it also smoothes it out with no lumps, THEN add your juice/drippings to that. Worchestershire sauce also adds a nice zing. Along with the wine. You can also save the time with the water, and add that water to the tray with the beef, make sure the beef is above the water (roasting pan), and the water will spread those vegetable flavours much better and prevent any scorched/burnt flavours.

I made a rump roast this afternoon and it turned out amazing. I didn't mash the geggies for the gravy, served them on the side but the gravy was SO good.❤

I just bought a 3 lb beef tenderloin for $103.99
Making it for the second time tonight. First time, I overcooked it, put in too many veggies, and the gravy was too thick. That being said, the extra veggies were delightful when finished in a frying pan, and the gravy was delightful; using a meat thermometer to monitor temperature tonight, so I'm hoping for a good result!
Edit: Steak was much better; checked it at the hour-fifteen mark with the meat thermometer, saw it said 140 f and was like "oh crap, it's done!" Much better meat this time -- though strangely, the gravy wasn't as good this time, and I think it was because it was a little too thin after being strained. Work in progress, but I look forwards to round 3.
That’s how I get better at cooking, experimenting and making little tweaks each time if I’m not happy. I’ve perfected so many recipes doing this!

Lol.. well I cooked a bunch of roasts of many different animals.. always look at some different ideas all the time.. however sticking with my low and slow.. reverse sear .get the drippings for yorkshire pudding.. then deglaze the pan for a very simple gravy.. but it is a good recipe.. hope you have a safe and happy Christmas :)

Also you guys should try this with honey-mustard glazing! 1 tsp honey, 2 tsp mustard and 1/2 tsp garlic powder, spread it on the roast after searing before putting it in the oven, it’s amazing!
