How to Make Mochi Ice Cream (Yukimi Daifuku Recipe) | OCHIKERON | Create Eat Happy :)

  • Mochi Ice Cream is a very popular ice cream wrapped with thin and chewy Mochi rice cake. You can enjoy making them by wrapping your favorite ice cream :)
    The ice cream I used in this video are here:
    Häagen-Dazs 30th Anniversary Rose (ハーゲンダッツ 30th アニバーサリー ローズ)
    Häagen-Dazs Spoon Vege Tomato Cherry (ハーゲンダッツ スプーンベジ トマトチェリー)
    Häagen-Dazs Spoon Vege Carrot Orange (ハーゲンダッツ スプーンベジ キャロットオレンジ)
    Meiji Essel Super Cup Very Vanilla (明治エッセル スーパーカップ 超バニラ)
    *btw, what Essel means is "excellent & essential". I never knew it was a coined word until I searched it. hehe

    Mochi Ice Cream (Yukimi Daifuku)
    Difficulty: Easy
    Time: 30min
    Number of servings: 8
    Ingredients:
    50g (1.8oz.) Shiratamako (lumpy glutinous rice flour)
    75g (2.7oz.) sugar *you will need at least this much sugar to keep the Mochi soft in the freezer. some people add 1 tsp. of cooking oil to keep it even softer.
    100ml water
    ice cream of your choice
    Katakuriko (potato starch) or corn starch
    Directions:
    1. Place Shiratamako (lumpy glutinous rice flour) in a microwavable bowl. Add water little by little and mix very well with a whisk. Then add sugar and mix well. *DO NOT add sugar before you mix the Shiratamako and water together. Otherwise, they won't mix well (the lumpy texture won't go away).
    2. Cover with plastic wrap, then microwave at 600 watts for 2 minutes. Mix well with a damp spatula. Cover with plastic wrap again, then microwave at 600 watts for 1 minute. Mix well with a damp spatula.
    3. Dust some starch on the counter. Place the mochi. Then sprinkle some starch and flatten out the mochi using your hands and a rolling pin to 3mm (0.1 inch) thick.
    4. When the mochi is completely cool, cut into 8 square pieces. OR you can use a round cookie cutter or a cup to cut into 8 round pieces.
    5. Line a small bowl with plastic wrap, place the mochi, place some ice cream, pinch the mochi to seal, then wrap with plastic wrap to shape.
    6. Keep in the freezer. When you eat, put it out from the fridge for a few minutes until the mochi gets soft.

    I made this today! I had no idea ice cream mochi was so easy to make! The only thing I had trouble with was shaping it fast enough before the ice cream melted. Also mine turned out bite sized even though yours were pretty big. Maybe I didn’t roll out the mochi thin enough..

    Hello everyone without a microwave. I used a steamer and steamed around 16 minutes, maybe even a bit more. 15-20 minutes, and it was nice, chewy and very sticky. Its much more time consuming but it works well. :)

    Whoa whoa whoa 3:02 Haagen Dazs is my LIFE, I had no idea they made vegetable flavor in Japan, the carrot cherry flavor sounds amazing. I feel like the rose one probably tasted like perfume

    +Ewan Hatch yes mochiko is okay. you can use food coloring but that is not necessary because mochi is translucent and you can see through the color of the ice cream :)

    I was absolutely floored when I found Haagen Dazs green tea ice cream at a freaking Walmart in Michigan of all places. It's like my favorite ice cream and I thought I could only get in Japan or a Japanese restaurant at best. Needless to say I bought most of their stock and now I'm gonna make lots of mochi ice cream with it (:

    wow haagen dazs in japan is awesome, i've been living in Sydney for 5 months and haven't seen it once, even in Jakarta we have haagen dazs but doesn't have that much flavour to choose

      ochikeron can you use regular glutinous rice flour or do youu have to use lumpy rice flour

    For those who are wondering if you can use glutinous rice flour instead, yes, you can!! I tried it today but with 75 ml of water instead for 50 g of glutinous rice flour. And 95 g of sugar as well. However, I didn't put the mixture into microwave but steamed it for appr. 10 minutes instead. Otherwise, I did as per this video. The mochi ice cream turns out to be tasty.     made this following exactly what you said and it was heavenly >.< OMG the mochi really goes best with vanilla bean ice cream. I made some blueberry ice cream and matcha ice cream and they are divine with mochi as well ;) LOVE LOVE your recipe!

    I will give this a try using kulfi Indian icecream. I think the flavour of kulfis will really compliment the mochi. Thanks for showing the technique coz I really like yukimi daifuku

    Arigato Ochi-san! I have watched other videos on how to make mochi ice cream, but when I saw that you had done one I knew it would be super easy to follow :). When I buy ice cream mochi from the Japanese market, I always get black sesame flavor and anko flavor. Those are my favorites ^^. But matcha would be good. I've also had mango sherbet before. It was tasty. If I make my own, I think I should try rainbow sherbet.
