Secret Ingredient Apple Pie Filling ~ Canning Recipe ~ Water Bath or Steam Canning

  • Canning safe Apple Pie Filling recipe with a secret ingredient! Use Boiled Cider to take your apple pie filling to a whole new level. Yum!
    Makes 6-7 quarts
    24 c. peeled, cored and sliced apples (use a variety of cooking/baking apples for maximum flavor)
    5 1/2 c. sugar
    1 1/2 c. Clear Jel
    1 T. cinnamon
    1 t. nutmeg
    1 t. allspice
    2 c. water
    5 c. apple juice
    3/4 c. lemon juice
    1/2 c. boiled cider
    Apple flavored liquor of your choice (optional) would replace an equal amount from the 2 c. of water
    Ladle hot apple filling into hot pint or quart jars leaving 1" headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 25 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    I've found great success recently with preventing siphoning by leaving them in the canner longer. Whether water bath or pressure canning. I leave 5 minutes with the lid on, 10 with the lid off, then take them out and it's helped SO MUCH. My tomatoes that I pressure canned had so much siphoning. 😔

    Hi Carol! This apple pie filling is a staple on my pantry shelf. I can hours in pints because there are two of us in the house. This is such a versatile item to keep around. You can make an apple brown Betty, apple streusel, apple crisp, but my favorite is apple pie nachos. You can make an apple brown Betty, apple streusel, apple crisp, but my favorite is apple pie nachos. I butter flour tortillas then sprinkle with cinnamon sugar. I’ll slice the tortillas into wedges then broil until the sugar is bubbly. Remove the tortillas to your serving platter and put a dollop of apple pie filling on each then topped it with grated cheddar cheese. Back under the broiler until the cheese is melted. We serve them with a scoop of ice cream or freshly whipped cream on top. A dessert that is the envy of the party in less than 10 minutes

    Hi Carol. I just happen to watch a new video that Linda (Linda's Pantry) did on the same subject. She mentioned the siphoning problem also. Her conclusion was that the thickened syrup expands more than thinner juices or water and she found that increasing the headspace to 1¼ inches solved the problem. She also uses the water bath method so she keeps the jars in the water bath for a while after shutting off the heat. Just FYI. Rick

    Oh beautiful- I need to find cider again to make the boiled cider. Like others, it’s hard to find. I juiced a bunch of apples last year to make it. But, the apple pie filling HAS to be in my stash!! Thank you Carol!!!

    My Roots and Branches instructions for my multi purpose steam canner, says to turn off the heat when done processing and leave lid on for 5 min, then remove the lid then the jars. I have been following their instructions and have not had a problem at all. I love to steam can and I bought mine on Carol’s recommendation. ❤️❤️❤️

    Canning with Clear gel is tricky I fill my jars to the "shoulders" leaving plenty of room for expansion which clear gel is notorious for popping off lids and oozing.

    Thanks for the video love love apple pie filling. Since I switched over to steam canning a few years ago syphoning has not been an issue for me, however, I do leave a bit more of headspace for pie filling to allow room for expansion of the clear Jel, 🥧😊 and allowing the jars to sit for an extra 5 min or so also helps 👍 can’t wait to make your syrup! And pie crust
