    In my experience with fruit float, I have found the choice of jar to be imperative. For vegetables or fruit that have a tendency to float I prefer using a regular mouth jar. To prevent fruit float, I fully pack the contents of the jar and strategically slide specific pieces of fruit or vegetables against the curvature of the jar to form a pressure fit. This has helped significantly reduce any floating issues. Hope this simple but useful tip helps!

    my first visit ! Lady, u do have such a beautiful dinning and kitchen.
    if I knew how to do social media - i 'd certainly love to joing you canning group. at 72 learnt all i know bout canning at granny's side in the 1960"s.
    warmed me to see canning lives on -i had no idea folks still canning

    do ya'll still put a pit in the jar when canning peaches,plums, apricots?
    we never used any preservers in ours back in" good ole days"

    I always add ascorbic acid to my syrup . As you mentioned, 1 tsp. per cup of syrup .
    I purchase ascorbic acid in bulk instead of the expensive little jars of brand name product.
    When you peel apples or peaches , etc. when they oxidize , as soon as you put in the syrup with the ascorbic acid they turn bright colored again.
    The vanilla bean in the syrup sounds so good !

    Thankyou so much I did them exactly to the note and there so pretty and well packed and all went to according to how they should be I’m a newbe and lost alot of food because there are so many on utube that give really bad advice didn’t know you can’t water bath carrots or potatoes 50 pounds of each and forever to do it only to be put in the garbrage besides I was so discouraged to try again my husband was pissed on the waste and watching my tears of defeat but but mustard up so courage again and pushed my self to try again and I’m so pleased I did thankyou so much love your well taught video especially for a new be the only thing I changed was my processing time because my altitude is 3557 feet making it 30 minutes processing time for where I live was hard to figure that part out but I finally got it. Thankyou again Love from Northern Canada

    Appalatcha Homestead did red-hot applesthat looked real good. Love vanilla so... bottling red-hot apples and cinnamon/ vanilla apples. Didn't get much of a garden in but have 9 apple trees that I would love assorted jars of apples on the shelves. I will also freeze-dry a bunch

    Sometimes the fruit comes back down to the bottom of the jar after it cools off a little. So I poured my juice out of my jar when I wanted to make a pie. I mixed in a little cornstarch slurry and it thicken right up. I added some raisins to the apples and poured them into my pie crust, added a few dabs of butter, covered with a top crust, and cooked it up. It was delicious.

    I am going to try this recipe. The cinnamon and vanilla sound delicious with the apples. After watching a previous video of yours, I canned apple slices with the Red Hots candies and did not like the taste, probably because I am not crazy about the candies themselves!     I have watched a Polish lady canning and she said there’s an old forgotten method to help seal/ eliminate the air inside. Before putting the lid on the jar she would add 2-3 drops of rectified alcohol/ vodka in the middle of the lid, set the fire with a lighter and the the flame is about halfway done turning while you gently but firmly hold the lid in your hand, you would set it in the jar. I’ve done it and it’s great ! Just be very careful and don’t set your kitchen on fire 😂.
    With that done proceed to water can as instructed in your recipe.

    Hi Carol. Love your content. I have a new stream canner, the Harvest, and have a question. My manual says to have the rack upside down and place the jars on top of that. Then start counting when dial in in my zone. Is this correct??? Thank you for all your help

      Yes and you need to have 3 quarts of simmering water in the bottom before you add your jars

      Jan Michetti just saw your comment... just add the ground spices and vanilla extract when making your syrup. Measurements would be to taste. I would start with a teaspoon of each then taste. Add more if you wish 😊

    Just tried this recipe today. My apples completely fell apart. I ended up raw packing a few jars just to see if they would turn out better. 😬 the taste is phenomenal. I’m thinking I might try the apple tart recipe from the Ball Book with the apple sauce 😆

    Hi Carol years ago when my mother and I open kettle caned tomatoes they never floated and they were beautiful in the jars, now it doesn’t seem like it matters if you pressure can them or do a boiling water bath they always float (makes me crazy). I have started to stew my tomatoes like I did with my mother but I fill my jars and then I pressure can them, they settle down in the jars and look much better. The apples look delicious. Have you ever made spiced crabapples? Delicious!

    Great video Carol! I steam canned 7 quarts of peeled, sliced and cored apples (a month ago) in that delicious syrup. I even made a home made apple pie from scratch (crust and filling) yesterday with 6 cups of those apples! Question: what do you do with the left over syrup? Any suggestions on how I can use that?

      Store it in the fridge and use it over pancakes or waffles, use to sweeten tea, warm and serve over cake, stir into yogurt or oatmeal 😊

      It’s really hard to give you a blanket answer on what is safe to change. Flavorings and spices, type of sugar, salt, swapping one type of onion for another, swapping types of peppers, swapping one vinegar for another (must be 5% acidity) are all safe changes. One of the reasons I like to change up a tested recipe is to help show what can be done safely. Next week I’m going to show you how to can your own soup using safe guidelines. A good place to start is to familiarize yourself with the list of things that are a definite NO for canning. You can in most cases leave out an ingredient you don’t like from a tested recipe. Acids are an exception as they usually play a safety role. In my last Q&A video I linked an article that will help called Safe Tweaks for Canning.

    I'm not sure if you will see my comments it 3/22 now. I canned a few apples today using your recipe. I'm not sure what I expected but I thought the apples would be somewhat crisp but even though they still are in wedges they are mushy soft. Yuck. I followed everything to the T processed for 20 min WB. Are they suppose to be mushy?

    We went to the apple orchard over the weekend! We picked Golden Delicious and Fugi apples. So far, I've canned apple sauce and apple butter. But just curious, instead of vanilla beans (i have on hand), would it work if I added some vanilla extract to the syrup? Thanks in advance!

    Hello! Do you need to increase the processing times when pressure canning foods at different elevations?

      This is water bath canning and yes you need to increase your processing time. I have an adjustment table in the description box. For pressure canning you increase the pressure based on elevation 😊

    Great video! I’m gonna try this. Question- I have the Victorio steam canner and my directions say to wait five minutes with lid on after processing. Is this not what yours says?

      cabin life I noticed they revised their manual to match the instructions for water bath canning. Here’s the link smhttp-ssl-21049.nexcesscdn.net/media/manual/victorio-vkp1130-manual.pdf. However, when I found the discrepancy I contacted the office where the steam canning research was done and she said there’s no need to wait five minutes with the lid on or off. You can find a screen shot of her email response to me on my fb page under photos... actually I’ll post it to the community tab here. However, many of us are experiencing siphoning issues with things that are canned in liquid (not a jam or jelly) so I’m thinking it’s better to wait the 5 minutes with the lid on and maybe an additional five minutes with the lid off. This is not a safety issue as far as processing but the siphoning is a problem. I’m going to talk about this in a video I think. Check the community tab in a few to see the response about waiting...

    Does it matter if the fruit floats? New to canning apples. I've seen some info that says that covering the jars with water while canning can cause syphoning. I've read that it isn't necessary to cover them and as far as history goes, it wasn't done.

      Fruit float is common. Air in the fruit can cause it. You MUST cover your jars with water when water bath canning for safety. I know there are videos circulating denying that but it’s not true that covering your jars with water causes siphoning.

    When I do this again I’ll also make vinegar with cores and peels. Vinegar has been hard to come by here
    Do you know whether it’s ok to use part turbinado sugar? The flavor is much better.

      K Quitberg yes, you can use any sugar. Just know turbinado is a bit darker than white so your syrup won’t be clear in color 😊

    Carol, I have a glass top stove and wondered how safe it is to use a water bath on the stove top. Right now I have been using it on my BBQ. Also, I have purchased the one that you are using and am just waiting for it to arrive. Question, how heavy is it when you fill it with jars and water?

      S. Lusted you should always check with the manufacturer of your stove. The other thing to look at is the bottom of the pot. As I understand it a pot must be flat on the bottom for glass stove tops. Please seek the advice of your stove manufacturer. 😊

      vickie Y they are fantastic straight from the jar 😊. You can thicken the syrup, heat and serve over pancakes/waffles or a piece of cake. Use them to make apple crisp. Almost anywhere you would use cooked apples but again my favorite is straight from the jar 😊

      Terry Riley I get mine wherever I can find the best produce. This time of year I love to support local farmers markets and orchards. We also garden and I also get some things from the grocery. Do what works for you and your budget 😊

    I find different books having different instructions on raw vs hot pack so confusing..
    The Amish book of canning allowed for pears to be cold packed and to follow the apricot recipe so that’s the way I did them .. but then you mentioned they must be hot packed...
    This is hard lol

      On3$ock$hort0faPair I know there are discrepancies... please don’t get discouraged. The NCHFP just says for apples and pears “raw packs make poor quality (pears/apples)”... It doesn’t state it’s a safety issue. If I’m honest, I’ve raw packed both and I’m not sure I agree with that statement. I’m just trying to keep to the guidelines as much as possible since so many are new and learning. The Amish Canning Book by Georgia Varozza is one I trust. She’s a certified master food preserver. 😊

    sometimes, when everything cools down whatever is in the jar will relax and it won't have that floating look. It will be full.

    I've been told Schilling uses a different bark and markets it as cinnamon 😢

    Carol, do you know if it is safe to use Atlas mason jars for water bath canning? Classico pasta sauce is processed in these jars. Thank you for all you do!

      Oh no......I just bought 16 no-name Mini (4 oz) Mason canning jars on Amazon. They are manufactured in China, and the only reason I bought them is because of the scarcity of canning jars. So the word Mason stamped on a jar is not necessarily an indication of manufacture for water bath or pressure canning use. A newbie mistake.

      Thank you for your video my apples turned out beautifully, i did use the vanilla favor instead of beans I didn't have any, can you also put spices,like cinnamon or allspice?? I am new at canning ..thank you so much .
