Canning Apple Slices in Cinnamon Vanilla Syrup ~ Water Bath or Steam Canning ~ Home Canning Apples

  • Home canned apples are a great pantry staple. Can in season and enjoy the whole year. Kick up the flavor with a cinnamon stick and vanilla beans infused into a light syrup. Just delicious!
    ~ 10 lbs. of apples that will hold their shape when cooked (I enjoy Honeycrisp, Ginger Gold, and Fuji). Peel, core and slice into halves, quarters or slices.
    Fruit Preserver or ascorbic acid
    5 1/4 c. water
    2 1/4 c. sugar
    1 cinnamon stick
    2 vanilla beans, slit
    Ladle hot apple slices into hot pint or quart jars leaving 1/2" headspace. Remove air bubbles. Wipe jar rim. Center lid and apply band to fingertip tight.
    Process for 20 minutes in boiling water or steam canner, adjusting for altitude as follows:
    1,001-3,000 ft ~ increase processing time by 5 minutes
    3,001-6,000 ft ~ increase processing time by 10 minutes
    6,001-8,000 ft ~ increase processing time by 15 minutes
    8,001-10,000 ft ~ increase processing time by 20 minutes
    Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

    My grandchildren just love the apples done this way. Took several cans camping with us in the summer now busy canning all the apples from the allotment. Thank you.

    In my experience with fruit float, I have found the choice of jar to be imperative. For vegetables or fruit that have a tendency to float I prefer using a regular mouth jar. To prevent fruit float, I fully pack the contents of the jar and strategically slide specific pieces of fruit or vegetables against the curvature of the jar to form a pressure fit. This has helped significantly reduce any floating issues. Hope this simple but useful tip helps!

    Sometimes the fruit comes back down to the bottom of the jar after it cools off a little. So I poured my juice out of my jar when I wanted to make a pie. I mixed in a little cornstarch slurry and it thicken right up. I added some raisins to the apples and poured them into my pie crust, added a few dabs of butter, covered with a top crust, and cooked it up. It was delicious.

    I am going to try this recipe. The cinnamon and vanilla sound delicious with the apples. After watching a previous video of yours, I canned apple slices with the Red Hots candies and did not like the taste, probably because I am not crazy about the candies themselves!
