To prevent the siphoning of sugar syrup like in this recipe, only fill the jars to 1/2 to 3/4 inch headspace. I inadvertently found out that the 1/4 in headspace was the problem
I just made this recipe and I doubled it like you did and I got 6 jars too. I wanted to have a little left over so I could taste it, so I guess I’ll have to open one these jars later. They are for Christmas so I’ll have to make more anyway. Next I’m making Apple Pie Jam it’s going to be a good Christmas!
I'm going to make this but will use "Lyles Golden Syrup" it's used in UK instead of corn syrup. It's an all natural syrup for baking and cooking but is cane sugar syrup, free of preservatives, artificial flavors and colors. It actually has a picture of a pecan pie on the front of the bottle.

Hello, I am new to canning I live at 6500 feet. Now I am sorry but I have a dumb question. In your instructions you say process 10 minutes in boiling water. But I fall under the increase processing time by 15 minutes. So does that mean I process up to 25 minutes for this recipe? Thank you for reading my question and responding to it.

Dear Carol, Since we've been watching your videos, my wife has subscribed to your Facebook group and we've canned 11 days straight - today making your black bean soup (yesterday your green pea soup) and at the same time watching this video today. Do you offer support groups for canners that are addicted to canning? I need help! Besides, we drink wine once the time duration has started... OMG, you should see our wine costs, not to mention our glass & lid expenses. Thank God we only have 25 cases of jars left. Hopefully we'll be done canning by Thanksgiving.

BTW, we are at it again this year canning everything in site and we are calling this month SEPTEMBER 500 as we should have our 500th jar in the canner this afternoon. You know, Carol is still liable for our addiction. Our attorney is drafting papers. ;-)

Unfortunately, no. Nuts are a low acid food and are only safe in tested recipes in stated amounts

You can thicken it to your desired consistency with a cornstarch slurry. And yes, Ball recipes are safe and tested

Make it without the nuts. Or try cashews. It really is good. I make it with real maple syrup because hubby is allergic to corn.

I would stick pretty close to the recipe. You could add more when you open a jar 😊
