    If you blanch the apples in water for one minute you won't have floating apples. I just finished making 12 quarts of this wonderful pie filling. It's actually fun to do and very satisfying when you're finished. So great to have on hand!

    holy smokes ! that canner is big enough to have a bath in ! and i do remember my gramma canning in a large round galvanized metal tub . and all the canning and prep was done in a summer kitchen !

    My mom and I make quarts of pie filling every few years. You can use it in pies, fried pies, and also cobblers! We just don't use much that's why we only make it every few years. We tend to rotate what we do. One year will be a whole bunch of applesauce, next year will be butter, next year will be pie filling, etc. You can also do it with other fruits! Peach, blueberry, etc.

      It makes me want to mute it and read the captions. I use a heatproof spatula to scrape the bottom of the pot.

    This apple pie recipe turned out quite tasty. I did do two things differently however. I used Instant Clear Jell, added some Craisins (I was out of raisins) and I added 1/3 cup Captain Morgan. Instead of slicing the apples I cut them into thick chunks, just for a change as I have always sliced them.
    OMG, that Captain Morgan really enhanced the flavor. (the alcohol burns off during the cooking).
    This was the first time I added the raw apples to the jars, then the hot syrup. I think will stay with partially cooking the apples in the syrup and doing a "hot pack" as I've always done. The reason is by doing the hot pack method my apples don't float and I can get more into the jars.
    By using the cold pack as in this recipe, I ended up needing to use two jars for one pie in order to have enough in the pie. Also, when filling the pie crust, I moved the apples from the jar with a slotted spoon in order to control the apple to syrup ration better. The leftover syrup I will keep to use over ice cream, pancakes, waffles, etc. Yum.

      Is Clear Jell just a thickener? I heard you can either add it when you pack the apples in the jars OR you can add it before you make your pie after opening the jars. Isn't there something called Pure Jell? Is that the same thing? LOL I'm so confused! I definitely want to try your Captain Morgan version. (Once I get some basics down).

    I've used this recipe...and its amazing, and they last for a long, long time. I dumped my apples into the mix..so they were coated. If not you can get small air pockets due to the sauce being so thick. I make apple crisp with 2 pints in a 8x8 then put crumb topping on and bake.... OH the house smells so good

    I have canned apple pie filling many of times before but never like this without cooking apples with the sauce. I like this seems like apples would stay a little more firm. I think I will give it a try! Thank you!

    I made this a couple years ago and learned. 1. Do not take it out of the canner right away, let the water and jars cool off together, helps with the seepage. 2. If they seep they will not seal and you need to re-process them. 3. Makes for a great easy filling to use over a camp fire to make pies in the castiron sandwich/pie press you can get.
    This is my year to do this again, so good and easy.

    My husband and I absolutely love your channel and do not miss a single episode. You had asked once for a helpful hint with chopping onions so it does not burn.... My secret is I chop mine either under an open window if I am doing 1 or 2 and for bulk I chop them outside. No burn, no tears! It is amazing!!!!

    This year I canned apple pie filling in quarts and pints, because the last time it seemed like one quart was not quite enough and two quarts was too much, for one pie. We had one pint leftover that I made into two 5 ish inch mini pies.

    I have plenty of apples available so I think I'm going to try your recipe. It looks delicious. Here's a tip I learned the hard way. Clear Jel thickens as it cools. So you don't want to cook it to the point where it's as thick as you want your pie filling. I made that mistake the first time I used Clear Jel and let's just say I wasn't impressed w/my apple pie filling. I've never made it again until your recipe. The easy instructions is what drew me to this recipe. You do an excellent job of making canning appear easy & less intimidating. TY

      Update- Rachel this recipe is de bomb. OMG I could sit and eat it right out of the jar. I made it exactly as per your instructions. I had quit making apple pie filling after my ClearJel disaster. Your recipe changed my mind. I made TWO batches of this pie filling to get us through the year. Thank you this recipe is incredible.

    Awesome job Rachel, looks fantastic. I did the Amish Apple Pie Filling with cornstarch and apple juice. I gave some away and kept some for myself. They are so good. I didn't cook my apples either I just poured the filling over them and mixed it in real good and added them to the jars. I love apple crisp, yummy. The leftover ideas sound good too! Thanks so much...

      Cornstarch and flour are no longer considered safe for canning. (Maybe you added it/them after canning when you're making your dessert.)

      ​@@happydays1336 I definitely used it before and it worked out fantastic. I followed the recipe in the Amish Canning Cookbook and it said to use either sure gel or cornstarch. Since I don't use sure gel I went with the cornstarch.

    Thanks for making this channel for us.
    I find myself looking at canned goods in the "meal" or "side" mindset. It helps me realize each jar makes a difference in my food storage and how much more I need. I also look at my purchased cans of food the same way. A stock pile is a beautiful thing!

    Hi. That 1870's Homestead. That apple dessert canning is great. I can make apple sauce and put some of it in a container. I only make apple sauce when I am at work.     I use this same recipe and when the solution gets nice and thick I add the Lemon juice and combine, add the apples right in. I get 7 full qrts. Watergate 20 min. Turn off the heat and let it cool down some before taking out of Watergate and you won't get seepage.

    Been making apple pie filling for many, many years and do believe you are going to be very happy you have this on your shelves! I pretty much make mine just like you did. I never make enough! We are always out way before our apples are ready! I always have pre made pie dough in the freezer rolled out and ready for pies and tarts. Leave the jars in the canner after they are done for an extra 20 min and you probably won’t have any seepage! It is good on ice cream!!

    You can make ahead and freeze pie dough so all you have to do is thaw, roll, dump in your filling and bake :)

    I wish my husband loved apples like I do because I would have definitely made some of that with the apples I bought at my friend's orchard. Instead I made berry applesauce and caramel apple pie jam. I would be definitely interested in your pre-made mixes. I'm wanting to do that - have biscuit mix made up for sure. I had bought way more flour earlier this year when I was still making sourdough stuff, which I'm not now. I love homemade biscuits so much better than the canned biscuits. The pre-made cake mix would be good too. We usually do it with cherry pie filling, but we put that in the bottom of the dish, add the cake mix (I can get 2 servings from regular box cake mix), and cut up a stick of butter on top and bake. I guess if I do it with the apple one, it would be all mine! LOL

    I had just made apple pie filling yesterday for the first time. I used 1.5 pint jars thinking 1 jars if making crisp, 2 if making pie. The recipe I used called for 5 1/2 c sugar which I think was a little too sweet and apple juice instead of water. I'm going to try this recipe today. Makes an easy dessert I used Jonathan, Fugi, and golden delicious Michigan apples I got at Meijer for 59 c/ lb. Great buy
    I did use up the rest of the apples today and made 8. 1.5 pts. 24 c of sliced apples, increased clear gel to 2 c, tastes awesome,the sweetness was just right. I had enough filling left over to make a small pan of gluten free apple crisp for my granddaughter.

    Woo hoo! I love my amish canner. I picked it up about 8 yrs ago. The only down side is filling and emptying. It's too heavy to move full of water. I use a 2 gal. amish stainless tea kettle to fill it. It is so nice running large canning loads! You get more in the jars with cooked apples because of shrinkage. The down side is the apples are usually soft from all of the cooking. I had a blast watching the dog burrow below the blanket on the chair. Too funny making a nest. Congrats on the canner and have fun!

    So glad you love your canner. This year replaced some of the water with apple juice. It gave the filling another layer of flavor and was able to reduce sugar.

    The blanket on the blue chair moved. And it’s almost Halloween. YIKES!😱 that looks wonderful. I could almost smell it. I was thinking the bit of extra would be awesome on a dish of ice cream.     Raw packing the apples has them shrinking and floating like that, but having no seepage makes it a winner in my book.

    I used this recipe last year for all my apples and it is delicious. The only thing that I am doing different this year is the thickener I did get the clear jel off Amazon because my filling separated in the jars it is still good I just have to mix it before putting it in the pie crust.

    Looks yummy! I use my pressure canners when I need to water bath anything, one of my large skillets has a glass lid that fits them perfectly. I like to can my apples in a simple syrup that way I can use them in any recipe.

    FYI, not sure what size your pie plate is, but I find that I always have to use two quarts to make a good apple pie.

    I think I'll do that with all the blueberries i harvested this year! There's a recipe for the blueberry filling in my Ball book. And Yes, wonderful gift!

    Apples looked delicious. Was just thinking that when you come to make a pie you will have extra liquid. Reduced in a pan that would be great drizzled over some ice cream to accompany the pie. 😋
