I made apple pie filling for the first time about a month ago. That was a messy sticky process! LOL.
I don't even like apple pie personally. But I love to put apple pie filling in my oatmeal. So I just put it in smaller jars.

Lisa get a chair with a back one that sits high so you can peel them sitting down. That looks like something I’d use if I was peeling that many apples.
    Blessings my friend.

I have the same issue with my back, if I stand for long periods of time. My husband went and bought me a Huskey work bench that raises up and down. It has a couple of tool drawers too. I sit on a stool when I have a lot of prep-work to do. I love it.

As the population ages people will have those issues. I already do as I’m in my late 60’s. But I have a chair on wheels that I sit on and I have a desk in my kitchen where I prep sitting down. You just have to readjust how you do things. I refuse to give up until I can’t sit lol. I’m still canning away. I’m not as fast as others but I get the job done!

I have a Pampered Chef peeler/corer. This year, my friend built a cutting board for me that fits over my sink. The peeler clamps onto the board and all the juice stays in the sink. It's awesome. When I want bigger slices, I sit down to peel by hand. The scrap and finished slices buckets just have to be on the floor. I processes sooooo many apples this year.
