Little did I know that I'd be experiencing so much more of Spanish cuisine after going vegan, because you have showed me all of these delicious, Spanish plant based recipes that are all just bursting with those authentic Spanish flavors. Your vegetable paellas, bean and chickpea stews have become regular dishes for me now and I absolutely love them. This dish looks absolutely amazing and I can't wait to try it! Thank you for showing the world that there's so much more to Spanish food than meat and seafood!

I love these nutritious Med dishes. I made the chickpea and spinach stew for dinner - we are having it tonight - with parmesan grated on the top and a hunk of warm wholemeal sourdough bread. Lovely!

We made this tonight, substituting Spanish rice with arborio-similar, and I have Spanish round rice coming soon to compare. I used a good commercial stock. The result was super-good, and so filling! I believe in using what is to hand if you don't possess an exact recipe item. Delicious Manchego is now becoming widely available here-my girlfriend loves your _tapas_ that use it.
Sent the link to this video to my plant based diet daughter who made and loved it. Made it myself this evening, 11-15-21, loved it too. Just added a little sprinkle of cayenne to mine, finishing touch. I think it would work well with some sort of white bean too, in lieu of the chick peas. I’m not vegan, but may start including more meals like this in my diet, was definitely satiating. The wife is full blooded Portuguese and this is not very far off from some of the stews she makes. Great job Sir, keep them coming.

I've made some of these recipes with long grain, adjusting the water/rice measurements and keeping it covered for 20min on low #2 heat. They came out delicious. In my area, gourmet rices are crazy expensive.
Wow!! This was surprising fantastic. The purée combined with the stock and oil gives it an almost buttery taste. It's creamy and very flavorful made with simple ingredients. Albert, these techniques are really great. I'm learning so much. Cookbook please?

Did this tonight, didn’t purée ALL the vegetables, to give the meal more of a complete meal effect, and not so much garlic. It was absolutely yummy. Thank you so much for this recipe. By the way, what is the saffron for, I did add it?
Made this tonight and it was divina! I especially loved it because my veggie-averse kids ate it without too much “encouragement.” I did add a splash of white wine to the rice, and since I didn’t have vegetable broth I added some V8 juice to chicken broth and used it. Totally delicious. Thanks for another incredible recipe. Question: in the old days would the cook have used a mortar and pestle to mash the cooked veggies?
I have noticed that you cook your rice differently than what I am used to ... boiling covered ... to an open pan. You comment that at the end of the recipe that you cover the pan to continue to cook the rice. Is the rice soft or semi-soft or al dente? I prefer my rice well cooked and soft. How would I alter the recipes in any way to be sure of that. I love watching your channel and I can almost smell my grandmother's cooking! Gracias!
Here in Germany we have risotto rice or rice pudding rice in the shops - I assume that is similar to the Valencian rice you used and could be substituted I think we have a Spanish food shop in town specialising in Spanish goods but I haven't been since before the pandemic so I don't know if they are still in business
