I wouldn't go to any lengths praising the level of quality of available greens in major food chains neither from a ecological balance point of view, variety/monoculture wise nor considering taste or texture compared to the rest of Europe
My mom and dad were from West Tampa. It was Spanish, Cubans and Italian back then. That was back in the 1920's. The food that I grew up with that they taught me how to cook is the best in the world.

I recently discovered your channel. The Spanish kitchen is just unbelievable. Simple ingredients, simple cooking, but the end result... My God, it is so delicious... I have tried multiple of your recipes, just now this one. Thanks man.
I made the Spanish Paprika potatoes and garbanzo beans. Another great idea on thickening the broth... sauted chunk garlic, then a fried egg and then toasted bread cubes in the left over olive oil. Heaven!!
I love the technique. I started making the broth today and added to your broth recipe some chicken thighs & celery, soy sauce, brown sugar & ketchup. I took out the chicken thighs for another meal, and saved the broth (32 oz) for other bean recipes. Now I going to add your 2 part beans technique to my broth. Can't wait to taste it. Thanks.
I'm eating it now. Used a parsnip instead of a carrot because that's what I had, and it's really good! Thanks for another amazing vegan recipe that's not "done to death." Can't wait to make it for friends.
This looks delicious, thanks for posting it. I am an older Australian lady, with mobility issues which sometimes makes meal preparation difficult. But your easy, and tasty looking recipes really appeal to me, and I am going to start making them.
I walked across Spain on the Camino de Santiago four times from Pamplona to Santiago. Several times staying at albergues I shared Alubias de Cantabria with strangers who became friends. Never had quite your combination of spices, but always made do.
When I traveled through northern Spain a few years ago (on the _Camino de Santiago_ ), one of the many things I noticed was how *wonderful* the food was! Everywhere you go, it's fresh, it's colorful, it's wholesome, and most of all, just absolutely delicious. So I can't wait to try this! Thanks!
CM Rosary: I was planning to do that trip this year (before the covid 19 pandemic) hopefully when everything is back to normal we can aim for next year sometime!
I have been on the Camino too - five different times actually, I loved the simple humble meals that were often served in the albergues. I remember a potato and sausage stew in Logrono. I hope to go on the Camino again when the pandemic is over.
I was stationed at Torrejon, (right outside of Madrid) back in the early 80's. Oh man, those were the best years of my life. The food, the scenery, the architecture, the people. What fantastic memories. I sure could go for some cafe' con leche and some tortilla Espanol right now.
Used to hear "American Top 40" AFRTS" (American Forces Radio Torrejón) in Madrid back in the late 70s. Also remember their short program called "Say it in Spanish" i.e. For a Beer ask for Una Cerveza, for a small beer Una Caña por favor...Regards from Madrid
Yes! The Smell is intoxicating! ( Try it in a crackpot that you prepare the night(afternoon) before and wake up to that smell the next morning!😱🍷😂🕺crOckpot not crAckpot🤦♂️
At first i thought this looks boring, but i had all the ingedients at home and i tried it and boy was i proven wrong. This stew has flavors i havent had before and LOTS OF IT. Amazing dish, will do it more often now. thanks!
Watched you video and made the dish this evening for my dinner. Holy moly.....This is an explosion of flavour and the texture is so rich and meaty!!! It will easily become one of my favorit bean dishes. Thanks a lot. I am now a subscriber to your channel
love it I used to live in Spain and it impacted the way I cook ever since! this is similar to what I do a lot of times with beans but I've never thought to make a puree like that I've got to try this!
made this today...chilly cold stormy day. the layers, nuances and textures of flavor are incredible. Cucina smelled delightful. Some crusty bread, and smoked queso. Divine. gracías.
Albert, this dish was so easy to prepare and was soooo delicious! This is a hit in our house. I will be making this over and over again. Thank you for all your incredible videos and recipes.
I absolutely love what I'm learning about Spanish cooking! I really appreciate how the ingredients are generally rustic, simple, but hearty! I think the next recipe I try will have to be either Spanish Peasant Soup or Spanish Beans and Eggs. Thank you so much for sharing these delicious recipes and helping home cooks like me broaden our horizons!
I love the joy and enthusiasm you put into cooking being a cooking freak myself it makes my heart sing. I've always said.......the more love you mix into your cooking the better the taste. Stay safe and stay blessed🙏🙏🙏🙏🙏. Oh, btw I love beans so healthy and delish!
artisansportsman When for example I am making a beef burgundy style stew I always start a Day -2 for the meat to marinate in red wine until Day-1 when I actually slow cook it and leave it to rest until day D . This way all the flavours have mixed and not only the meat but the vegetables like the carrots have released their subtle sugary taste and are melting like the meat . Time makes the big difference between a good dish and a dish at its best .
Thanks for great Spanish Vegetarian Dishes. Can you please post more easy and pure Vegetarian recipes from Spain like this one please. Also, the way you explain, makes it more appetizing. Great work.
Thing I love most about this dish is that it is heart healthy! Many delicious comfort foods like this are NOT good for your heart, this is so good for you. Thank you for this amazing recipe!!!
Great Spain dishes! More to learn with tips for cooking. Thanks dear. As far this red bean we Indians call in Rajma. It is a favored dish in Punjab. Rajma chawal - Red beans with rice is a combo. You give a nice tip that to use large long bowl to yo make veg puree with hand blender. That way splashing is avoided. The stock is a helping hand as to freeze the rest extra in the freezer to reuse. Wonder blending and enmeshes all the whole a fantastic recipe from Spain. We soak Rajma 5 hrs or overnight then pressure cook it them with herbs and onion and tomatoes. Cilantro splashed over it. Lime to extra tongue tingling.
Glad I found your channel, This is the recipe which hooked me. I can't wait to make it. I love kidney beans and I think I will love Spanish cuisine as it seems to be healthy and hearty! Ross.
Albert, my friend, you are a marvelous chef and an excellent teacher! Due to my wife's health, I have had to begin assuming the role of cook, which has been her role for over 50 years. It is intimidating at 70+ years old. I am so thankful I found you and your videos. (I speak Spanish, but your English is far better than my Spanish.) I have made your breakfast potatoes twice and gained a bit of confidence to move on. As for the Alubias de Cantabria, how would it work to substitute black beans for the kidney beans? My wife is not too fond of kidney beans, and since I am cooking for her, I need to prepare what she can eat. Is there a bean that would work better than black beans? Thank you for all the good you do, young man!!
I would suggest using pinto beans instead of kydney beans here, they work great as well, keep on trucking, you sound like a naturally great cook! much love to you both :)
EXCELLENT. Mine came out fantastic. I substituted Hatch chilis, and the extra spiciness went well. Used organic everything, and went with organic kidney beans that I re-hydrated overnight. Super easy recipe...and healthy, too! SUBSCRIBED!
I made this dish today and it was yummy. My sweetie loved it. I used dried beans which I soaked overnight but went by your recipe for everything else. It went well with steamed rice. Thanks for the recipe and I will be trying your other recipes as well as I am sure they will be just as good.
@@valenheredia7617 I went to his link for the full recipe. He says to soak dried beans in cold water for 24 hours and boil them for 45 minutes. I have found that soaking for 12 hours is adequate. Boiling suffices to finish tenderizing the beans. The only time I used canned beans was to make moros y cristianos.
I made your recipe and it’s amazing, we had it with French bread from our village bakery. Also, I had some cold the next day, I mashed it and had i5 on toasted bread. Absolutely delicious.
just today stumbled across your UA-cam channel - saw thisrecioe and will try it in the next few days. It looks very good - we love all those ingredients. thank you for sharing this recipe

I'm going to try this tomorrow. Because of you, I have been experimenting with paprika and saffron, and I am enjoying them immensely. I like that so many of your dishes are vegetarian. Thank you.
I never associated Spain, the land of Arroz con Pollo, with wonderful and filling vegetarian cuisine. Thank you for making aware of the depth of its food.
You are doing a great job teaching about Spanish cousin. In Latin America we have inherited many procedures and ingredients from our motherland but we like to learn the real Spanish way .
I just made this - I added a half of tin of chopped tomatoes too - absolutely amazing....because I've so many food allergies I'll be eating this a few times a week....thanks a mill for the recipe!
@@blueterrace by your flag Im assuming you probably call them canned...in Ireland we call them tins - like a tin of beans...keep that flag flyin high by the way :)
Thanks so much for this fabulous dish. I will be making this regularly from now on. For me, I doubled the vegetables and spices and added a couple of ribs of celery, because I had it. Really tasty and filling. Loved it and recommend it.
Why have I not heard about you until now? I'm your newest big fan. Your recipes are amazing and your videos are packed with information--short, sweet, and to the point. I appreciate that. Also, your voice is soothing and the noises in your cooking techniques create an ASMR effect. Keep up the great work and thank you.

Looks good and Ill give it a try but I have to say you have a nice deep voice and you are articulated with your presentation. And Im not waiting till the end of the video to write this. I love your voice.
This was a great recipe, I'll be making it again for sure. My own minor variation was I mixed red beans and chickpeas just because I had some, and added 2 celery stalks in with the stock veggies and veggie puree. Thanks for sharing this!
I am albanian from south Albania, we also cook this dish it is delicious! Thank Akis
Sounds great! Much love :)
When I fried the garlic I added chorizo and now I'm crying, it's so good.
i add a chunk of red hot pepper and now i cry even more, of happiness and pain...

So happy to hear that! Much love :)
This looks delicious, thanks for posting it. I am an older Australian lady, with mobility issues which sometimes makes meal preparation difficult. But your easy, and tasty looking recipes really appeal to me, and I am going to start making them.
So happy to hear that! take care and much love :)
I will definitely try this soon, thanks for the great video!!

I walked across Spain on the Camino de Santiago four times from Pamplona to Santiago. Several times staying at albergues I shared Alubias de Cantabria with strangers who became friends. Never had quite your combination of spices, but always made do.
I lived in Spain for three years...very healthy cuisine beautiful country nice people.
Glad to hear! thanks for the comment :) much love from España
I've only watched two of his videos but I saved them both for future meals. Easy to make, common ingredients and they look delicious! SCORE!!
Glad you like them! Much love :)

Thx from Brazil for a recipe with easy to find ingredients! Homecooks need simple and tasty recipes like this!
Much love :)
Thanks!
That is amazing! thanks for the comment :) much love
CM Rosary: I was planning to do that trip this year (before the covid 19 pandemic) hopefully when everything is back to normal we can aim for next year sometime!
@@jixuscrixus1967 It would be my honor, friend!
I have been on the Camino too - five different times actually, I loved the simple humble meals that were often served in the albergues. I remember a potato and sausage stew in Logrono. I hope to go on the Camino again when the pandemic is over.
This will be really good with rice. My favourite. We make a dish called Rajma Chawal....... Rajma means kidney beans and chawal means rice.
I was just about to make a similar comment. BTW, it is called simply Rajma; there is no 'chawal'.
I was stationed at Torrejon, (right outside of Madrid) back in the early 80's. Oh man, those were the best years of my life. The food, the scenery, the architecture, the people. What fantastic memories. I sure could go for some cafe' con leche and some tortilla Espanol right now.
Very cool! Much love :)
Bean stew, made it. Smells incredibly delicious. Tastes satisfying healthy alternative for meat. Thank you for your smile. That does a body good also.

love it I used to live in Spain and it impacted the way I cook ever since! this is similar to what I do a lot of times with beans but I've never thought to make a puree like that I've got to try this!
Sounds great! Much love :)
Very clear instructions. Looking forward to making this on a cold, winter night.

That looks fabulous! I can almost smell this bean stew. Marvelous for a winter meatless Monday.
Appreciate the comment! Much love :)
Spanish food is well known for its subtlety and originality. Beans! Yummy!
I totally agree!!! thanks for the comment :) much love
Ive now tried 3 or 4 of your recipes. Very easy and inexpensive but great taste. Love it.
Great to hear! Thanks for the comment :) much love
I think it would taste even better the next day after it's been in the fridge overnight.
Yes like all the slow cooked dishes in rich sauces ( ie stews ) but also soups .
RDL, I'm with you , always better next day
artisansportsman When for example I am making a beef burgundy style stew I always start a Day -2 for the meat to marinate in red wine until Day-1 when I actually slow cook it and leave it to rest until day D . This way all the flavours have mixed and not only the meat but the vegetables like the carrots have released their subtle sugary taste and are melting like the meat . Time makes the big difference between a good dish and a dish at its best .
@Born an Atheist! Happy Heathen! Like Chorizo...Spanish one obviously !

Thanks for the comment :) much love!
Glad I found your channel, This is the recipe which hooked me. I can't wait to make it. I love kidney beans and I think I will love Spanish cuisine as it seems to be healthy and hearty! Ross.

Thanks for making the recipe so clear and concise. That looks very easy.

@@SpainonaFork Muchas gracias por la ayuda y las palabras amables.
EXCELLENT.
Mine came out fantastic. I substituted Hatch chilis, and the extra spiciness went well. Used organic everything, and went with organic kidney beans that I re-hydrated overnight. Super easy recipe...and healthy, too!

The best recipes are often the humble ones. With beans or lentils or chickpeas it's possible to make beautiful dishes!!
Absolutely!! Much love :)
Very nice. I cannot wait to try it. This is perfect for the cooler weather.
Yes!! Thanks for the comment :) much love
I made this dish today and it was yummy. My sweetie loved it. I used dried beans which I soaked overnight but went by your recipe for everything else. It went well with steamed rice. Thanks for the recipe and I will be trying your other recipes as well as I am sure they will be just as good.
Did you use the soaked overnight, uncooked beans the same way he did on the video?
@@valenheredia7617 I went to his link for the full recipe. He says to soak dried beans in cold water for 24 hours and boil them for 45 minutes. I have found that soaking for 12 hours is adequate. Boiling suffices to finish tenderizing the beans. The only time I used canned beans was to make moros y cristianos.
I made your recipe and it’s amazing, we had it with French bread from our village bakery. Also, I had some cold the next day, I mashed it and had i5 on toasted bread. Absolutely delicious.
Much love :)
Great idea to try it cold.

This is a beautiful bean stew dish! Beans and potatoes constantly compete with each other, for my love. Lol... Thank you for this wonderful recipe! 🤗

Absolutely no reason you couldn't put chunks of potato in this too. Wouldn't be authentic of course but it certainly would be good.
I just made this - I added a half of tin of chopped tomatoes too - absolutely amazing....because I've so many food allergies I'll be eating this a few times a week....thanks a mill for the recipe!
