Monkey bread was my go-to edible gift for several years. I use a bundt pan and make a sauce of brown sugar, bourbon, dark chocolate, and butter. Then, the sugared dough balls get layered into the pan along with chopped pecans and dried cherries, covered with sauce in layers, baked, and inverted for serving. Claire's recipe seems pretty delicate and light, which would be perfect with coffee as a brunch opener or on Christmas day at the grandparents. Mine was intended more for long Michigan winter nights full of hot toddys and questionable decisions.
I made the recipe and one mistake I made was not adding enough flour to make a stiff dough, as in the video. Even so, the final product did come together. I baked it the night before service, and there was very differentiation between the balls, it was almost like cutting into cinnamon bread. What I would do next time is sprinkle in a good layer of the cinnamon sugar between each layer of balls, since there was plenty of sugar left over. This would create more sauce, and hopefully keep the balls separate. Doing this in a two-piece tube pan might be problematic if the syrup leaks out. I guess use your best judgment, maybe use a bundt pan instead.
Claire, when i see the video thumbnail, i think, "eh, that dish looks alright." But then as i watch the video and i see all the things that go into it and i start to imagine the smells and tastes, i find myself craving every dish i see you make! Im so inspired to cook even though its 1 am!
My grandma just cuts biscuit dough into squares, covers them in cinnamon sugar and layers then with a butter cinnamon and brown sugar syrup and bakes it. It so good.
It's even better with chopped pecans cooked into it. I like to toss the chopped pecans in layers as I throw the dough balls into the pan. Also the bottom (before any dough gets into the pan) I toss in a healthy amount of pecans, sugar and butter so when I flip the monkey bread out of the pan you have a beautiful presentation along with a nice caramel pecan sauce to flow over the cake
