How to Bake the Best Focaccia Bread You've Ever Tasted

- Making focaccia bread at home is magical. The smells, the thrill of waiting for the dough to rise, the gentle dimpling of the dough before sending it to bake, your face stuck to the oven's window and the anticipation. And then, the moment of truth, when you cut a slice and hear the crunch, and see the airy texture and the moist crumb. And finally, the taste, the heavenly taste of fresh bread, olive oil, and history. Trust me, you will fall in love with this focaccia bread.
I will show you how to bake the best focaccia bread you've ever tasted. If you follow my recipe, you will feel like a chef, your focaccia bread will impress anyone, yourself included. This is a NO KNEAD recipe. That's right, perfect result without even the need to... knead. It's also a same day focaccia bread, it will be ready in less than 2 hours, prep and proofing included.
To make this no knead focaccia bread, you will need the following ingredients:
• Bread flour - 4 cups (500 grams)
• Water - 1 ⅔ cup (400 milliliters)
• Brewer's yeast - 4 tsp. (12 grams) or dry yeast - 2 tsp. (6 grams)
• Sugar - 1 tsp.
• Olive oil - 2 tbsp. plus more for greasing and drizzling
• Salt - 2 tsp. plus more for sprinkling
The process is very simple and fun, and you don't need any special equipment or skills. You just need to mix the ingredients, let the dough rest and rise, make a couple of simple stretches (they really take less than a minute), spread it on a baking tray, dimple it with your fingers, sprinkle some water and salt, and bake it in a hot oven. That's it!

Water - 1 ⅔ cup (400 milliliters)
Brewer's yeast - 4 tsp. (12 grams) or dry yeast - 2 tsp. (6 grams)
Crumble into the water
Sugar - 1 tsp.
Mix until the yeast is dissolved
Bread flour - 4 cups (500 grams)
Add the water and yeast mixture
Mix
The dough is soft and easy to mix with a wooden spoon
Olive oil - 2 tbsp.
Focaccia loooooves olive oil
Salt - 2 tsp.
Mix to incorporate the olive oil
That's it! You don't need to... knead
Clean the spoon and the bowl sides
Cover and let rest for 30 minutes
Soak your hand in clean water
Grab the 4 sides of the dough and fold them to the center
Soak your hand before each fold
This stretching will help develop the gluten network
Lift the dough from the center and slap it into the bowl a couple of times
Cover and let rest for 30 minutes
Already full of bubbles!
So wobbly!
Let's do the same process as before one more time
Stretch and fold the 4 sides
Lift and slap a couple of times
It's ready now!
Grease the tray with olive oil
Be generous, focaccia loves olive oil!
Transfer the dough into the tray
More olive oil? Yes, trust me!
A relaxing olive oil massage
The goal now is to spread the dough, don't worry if it doesn't cover the entire tray
Cover with another tray and let rest for 30 minutes
Guess what?
Guess what?
Just a little more olive oil
Dimple the focaccia with your fingers
Dip the fingers until you feel the tray, you don't have to be very gentle
Sprinkle a little water on top
Sprinkle a little coarse salt
Bake at 440°F (230°C) for 20 minutes
Look at it! Wait until you see the bubbles!
Transfer to a wire rack to cool (if you have the patience)
Now let's hear some music

I really don't understand people's comments about too much olive oil. That's the traditional recipe and that's how it's done in Italy. Focaccia with less olive oil is not real focaccia. I had focaccia in Italy and watched it being made by an artisan, he used even more olive oil. It is not greasy at all, it tastes like heaven. I'm salivating just thinking about it. Without olive oil you make flatbread.
Thanks for that! I have already replied to someone about this, but you are absolutely right. Focaccia, to be called that, needs olive oil. I make traditional focaccia and there's no other way for me.

Today, I made focaccia and added some olives, a little bit of onion, rosemary, and oregano (my Italian aunt told me to make it that way, and I wanted to honor her). But guess what? Your video always guides me whenever I need to make focaccia, even though I already know every single step of the recipe. I press in small pieces of tomato and cheese, sometimes garlic and butter, and after it is baked, I put more olive oil on top. Italians say that focaccia is always thirsty of olive oil. In Croatia we have magnificent olive oil so it is a joy to make.

Have made this twice in the last three weeks. Absolutely the easiest foccacia I ever made. Do not skimp on the olive oil. It makes it crispy on the bottom and on the top and imparts a delicious flavor. Boyfriend loved it. Will be making this often.

La première fois que j’en ai mangée, c’est ma Nonna qui nous l’a offerte. Il y avait une boulangerie à côté de l’immeuble où elle vivait, à la Via Campione à Bari. Omg, here in Hungary that's the simpliest homemade pizza dough, i've also baked for my family, with toppings ofc, works with instant yeast as well, but that gotta be mixed with the flour before, i used it in water then it never worked, i don't consume white flour anymore, but brings back nice memories

I always sprinkle chopped fresh rosemary on my focaccia. The smell!
Fresh rosemary is also my favorite addition! I just pick it off the branch with my hand and sprinkle it over the top without chopping, it gets crispy and delicious.

I made this this morning. I have to say it was great fun. But I find all that olive oil overpowers the yeast in both smell and flavor. Granted I'm not a huge olive oil fan, so next time I may opt to reduce the olive oil or use a different oil, or perhaps add other flavors, garlic or onion. The texture is outstanding. I also needed a bigger bowl. My 8 cup mixing bowl was a tight fit. I will use a wider bowl next time.
Hi Katie, so nice to hear you like it! I love olive oil, but I understand it's not for everyone. You could use a less aromatic oil, or a mix to just leave a hint of olive oil that makes it authentic. You could also try my less popular overnight focaccia, here's the link ua-cam.com/video/VA52LUdfRU4/v-deo.html. An overnight fermentation takes it to another level! It uses a lot less yeast, but in the end the fermentation allows it to develop an amazing flavor.
Faccio la focaccia utilizzando una ricetta impeccabile e con risultati eccellenti, ma che richiede tempi di lievitazione con lievito madre per circa 24h. Questa ricetta invece seppur con lievito di birra sembra molto più sbrigativa ed il risultato sembra ottimo. Devo assolutamente provare per fare un confronto 😏👍🏻. Vediamo cosa uscirà fuori🤞🏻
Un consiglio per chi è intollerante all oliva (e quindi all'olio) ma ama la focaccia? Si può usare l'olio di semi?

This recipe and procedure also makes a great pizza!! Par-bake at 500º until slightly golden (15 min.) Then top with sauce and favorite pizza ingredients. Finish baking a 475º to melt cheese and toppings are done. Cut into squares... and enjoy!

Just finished baking it, The dough did not rise anywhere close the way yours did. I did the folding twice and gave it more time to rise. I also let it cook for 30 mins because it was to lite at 20. But i"ll tell you something it is delicious. I think the problem was the yeast. The package stated to have the water between 110 - 115 degrees and stir it with 1/4 cup of water and sugar to get the yeast started. I used a dry yeast. I will try it like that next time.
That's a good start. If you are using dry "active" yeast, you will need to activate it as you suggested. It's the only type of yeast that needs to be activated. Just mix it with water and a little sugar and let it sit for about 10 minutes. If it rises to the top and gets frothy, it's ready to use. If not, it's dead.
