This as a delicious fall apart tender pot roast recipe, I cook it slow, and it is smothered in a heavenly gravy that is made with sweet carrots, onions, celery and perfect seasoning. I love to side my pot roast with mashed potatoes and homemade dinner rolls, it is a meal fit for a King. This hearty dinner recipe takes me back to my childhood when my mom often fixed it on weekends and it was one plate I licked clean. This pot roast recipe can be prepared with no effort at all, and it is a meal that is complete. Nothing beats a classic pot roast dinner, it is a perfect meal to serve when having company or just a special treat for the family...I always choose a nice big chuck roast, then season it well, prep it and before you know it you have a hearty delicious dinner ready to impress. Along with my seasoning, I like to add fresh rosemary, thyme, garlic and good chicken and beef stock and 1 good Tbsp of bacon grease for added flavor. My pot roast is ready to enjoy after about 3 hours, every minute is worth it.
INGREDIENTS ... 325° (3 hours)
3&1/2 LB. Chuck roast (NOT shoulder if possible) (look for the marbling)
kosher salt (as needed)
Pepper (fresh ground)
2 tsp onion powder
2 tsp garlic powder
1 C. plus 3-5 Tbsp All purpose flour
1-3 Tbsp vegetable oil
1 tbsp bacon grease
5 medium carrots (divided)
2 Medium large onions
3 celery ribs (divided)
3 large garlic cloves (mashed)
Rosemary (2 big sorigs)
Thyme (2 sprigs)
3 C. Chicken stock (you decide)
1 C. beef broth
1 Tbsp tomato paste
1 tsp red wine vinegar (optional)
1 C. crushed tomatoes
2 Bay leaves
1/2 tsp Kitchen bouquet (optional)

Me too on that pot roast recipe. The only way I knew to cook a roast was the crock method. Using canned soup and Lipton onion soup mix. It is good but I am so glad to have a different recipe to use. Thank you very much!

I just came across your channel and had to watch how you cook a Chuck roast in a dutch oven. I've always done mine in a crock pot. I don't add any broth. I sear it and crock pot it. Always comes out tough. Yet I continue to make the same way. I'm absolutely going to try your recipe. Chuck roast are on sale now (that's the only time I buy them). I will try more of your recipes. It's not easy to cook for one. I do love to eat though 😃

Made the pot roast last night and knew that this is the recipe I will go back to. My only difference in making this was I used beef stock as I didn't have chicken. When it came time to skimming the grease, I discarded the veggies and poured the gravy into my gravy separator; find it easier than spooning. I added baby yukon potatoes to the roast. A very delicious and satisfying meal. Thank you Rachel.

I am a senior too. I make my version and then fill 4 pint jars. Being sure to sterilize the jars and add the stew when it is piping hot. If you use Bernardin Tops it is easy to tell if they seal. I then store them in my fridge -- just to make it double safe. Then I have stew once a week for a month from one batch.
Rachel, in my life I have never seen a more beautiful gravy! I never would had thought to add the vegetables twice! Brilliant! Imagine all of that savory flavor!

Hi Rachel I used to cook my pot roast like that when I first got married and that is like 56 years ago I stopped putting flour on my pot roast because of the extra calories. But I'm going to go back to doing that again I've never put tomato paste or tomatoes in my pot roast but I'm going to try that I'm 77 years old and I still like to cook and cook big meals it's just me and my landlady she doesn't cook she always bought fast food all the time on our way home from work, so now I do all the cooking and everything else she has she has Parkinson's so now I do it, but I still make her do stuff to keep her going I have loved all of your recipes that I have seen I think they're awesome and especially the Mexican food and I want to try that what you have made in the past and I would love those roll recipes as well thank you and have a wonderful day God bless Sharon J.

I just bought myself a dutch oven for Christmas. I've never owned one but I love pot roast.
Since restaurants have gotten so expensive, I will make pot roast for myself. I can't wait to use it.
@@maryere6278 - it looks to me as though the only bit that is fried is using a bit of oil to sear the surfaces of the meat - you can use any oil you like, and (at least in my experience) it only takes a quarter cup of Crisco, butter, schmaltz, tallow, or whatever other type of fat you have on hand. It's not remotely finished cooking at that point; the real cooking happens while it's in the oven. The searing is only to give it a browned surface and to seal in the juices so the meat doesn't get dry or stay tough.
Oh my gosh! Rachel, this Pot Roast deserves 10 Stars! I have made many over the years, many were great, and some were just okay. Let me say this is by far the best Pot Roast ever! I made it on yesterday and when served, it was the biggest hit, rave reviews from my guest, I was so proud of the results. Over the moon in taste! This method was the best, this is a keeper. In fact, the house still has that wonderful smell even this morning!! I am salivating right now...LOL! Thanks so much for sharing this one.

DEE LICIOUS recipe so like what my Mom used to make. I learned to cook from her and these recipes are priceless. Women from the 40's and 50's reallly made cooking an artform. So glad I learned yuoung and taught my children to cook also, even my son is a great cook. The only thing people do now is try to cook healthier and very often don't make the gravies and saukces. This roast looked so good I could almost taste it. Yum. Thank you for teaching the right way to cook.

Rachel, Dave here... after reviewing several recipes for Pot Roast, I decided on yours. Well, I was not disappointed!!! The best pot roast I ever made. Added a little crushed red pepper with the roast during the roasting process - resulted in a little kick, but not overwhelming. This is a "do again" meal....🥰Thank you!
This reminds me of my Mom's pot roast from the fifties! She was a great cook like you. There was always something delicious on the stove. And everything had such amazing flavor. And I love how you call him "My Ron". I lost my soulmate 22 years ago and always called him My Jim. I never go through this trouble since I live alone. But I really should. Pure comfort food. My husband has collapsed on the coach after three huge helpings (I did your mash potato too). I’m so happy and definitely subscribing. You’re a wonderful cook. I loved that you prepared at regular person speed and detailed everything so painstakingly. It was very reasonable too….meat cost $11; vegetables etc close to $15. I watched this video again this morning. I always add 1 large onion peeled, but whole, for each person we plan to serve. (We LOVE the slow roasted onion and I eat mine with the veggies.) I like to eat potatoes in the roast, But I like mashed potatoes and rich beefy gravy even more. Miss Rachel Lots of real butter on the fresh dinner rolls too..... Such a meal Rick

My first recipe from you and I made this tonight. It was easy to make because you gave great directions. My place smelled amazing! It's flavorful, hearty, and delicious. I like a lot of veggies, so I added 1 cup of peas, 1 pkg of mushrooms, and loads of potatoes. I served it on a bed of white rice. Gave a small sample to my doggies and they loved it too! Thank you!

Looks delicious. I will try cooking veg. Separate, then add in. I have in the past, put them in the pot roast. I will try this with the kit hen top added in. I normally cook with fresh tomatoes, never have added tomatoes paste. I will eagerly try. Looks really good. It's been several ye ad ts since I have made a roadt. Thank you for your recope.

This is exactly how my grandma taught me how to make a roast. I never did master her gravy, tho...I think maybe she didn't tell me the secret ingredient! HA We always had cubed potatoes, smash them on our plate and put the gravy all over....heaven on earth!

Rachel, your recipes are so easy to follow and you explain everything so well. I am glad you did not cook the pot roast to death, like I have seen on some other sites. To me, after you brown it on the stove, two hours is enough. I think you cooked it just right, so that it was well done, just the way I like it, but not dry. It was juicy, and tender. Rachel, you make your's similar to mine ! Except in the beginning, I dredge with flour in a plastic bag, carefully getting all sides of the meat, then shake off the excess before I brown it in my Dutch Oven. I use a combination of olive and regular cooking oil. I use Beef Stock, not Chicken. Thank you for this delicious recipe. You are a fantastic cook and your kitchen is so clean and cozy.

I have never seen anyone including my mom, who was a great cook, exchange the cooked veggies for raw ones half way through. Makes perfect sense and looks delicious. Can't wait to try it.
