Anyone using a molcajete could keep some chicken broth frozen in the freezer instead of using bullion. Now I'm not trying to trash anyone if that sounds to harsh. Just a simple statement. I save lots of pint size jars from different items mayo, mustard, pickles, etc... So anytime I boil chicken I always save as much broth as i can. It will last for months and months in the freezer.

Nothing better than a homemade flour tortilla with Carne Guisada. I lived in Corpus Christi for almost 30 years. All the little mom and pop places sold Carne Guisada tacos for breakfast. I never noticed any bell pepper or tomato in any of them. The meat was falling apart tender so maybe the veggies had broken down in the gravy. I will try your recipe.

Looks delicious! Will give this recipe a try. I made something similar once, spiced up a Mississippi pot roast recipe with cumin and coriander, came out good, used banana peppers but suppose you could use a combination of bell and hot peppers. Yes, chuck roast is the best for stews!
Hands down, carne guisada is one of my top five favorite meals! I’m happy to see your version vs. my Abuelita’s. I lost her Christmas Day of 2014 and still miss her deeply. My only differences is to flour the meat when browning to form the fond. Plus she added a smidgen of oregano. Serving this to others in Tennessee, where I have lived for decades, we were always questioned about adding chicken bouillon vs beef. Abuelita said it was subtler and allowed the tender beef to shine with the amazing gravy! Like you said, low and slow. Seems like it took a lifetime to prepare but worth it all! Gimme a serving with her rice, beans, and a toasty flour tortilla and I am/was a happy girl! I can literally smell it!

Just made this. Didn't have tomato paste so I tweaked it. Instead of adding water. I used a little can of V8. It's similar to the Greek stafado... except for the Mexican seasoning. . The longer you simmer this the more tender your stew. Thanks for the recipe.

I love Carne Guisada. I’m from San Antonio so we have access to thousands of Mexican restaurants and everyone’s is so different but most are very good. We’re blessed here to have amazing Mexican/TexMex food. I wanted to make it, stumbled upon your lovely channel and made it along side your video. It’s not done and my rough came out way darker because my stove/ oven isn’t good but it tastes good still. Got about 49 minutes to go. On to your tortilla recipe. May as well lol.
