  • Healthy leek quiche
    1 lbs of clean sliced leeks ( about two whole leeks )
    1/4 cup of ground oats
    1 cup cottage cheese
    Salt
    Pepper
    2 grated Garlic cloves
    3 large Eggs
    1/2 cup grated Sharp cheddar
    Sautee your Leeks in a frying pan until tender. Let it cool completely.
    Preheat your oven at 400 Fahrenheit.
    In a bowl , add your cooled leeks , salt , pepper, grated garlic and ground oats . Mix well with a help of a fork. Push the mixture to the side and add your eggs and the cottage cheese ,combine well.
    Pour the mixture into a 9 inches pie dish that’s lined with parchment paper. Don’t forget to brush some olive oil at the bottom and the sides of your dish . Sprinkle the cheddar on top and bake for about 30 minutes. Let it cool for about 10-15 minutes before serving.
    Keeps 3-4 days in the refrigerator.
