I do my ribs at 225F. My spice mixture is a homemade Southwestern style spice (also great for tacos) and brown sugar. I use a combination of pecan and apple wood. I don't use any binder, but I do leave the ribs in the fridge overnight after I season them. That lets the seasoning get right into the meat.

Aye,~ Thank You Boy's for breaking it down.
You both brought great knowledge and excitement to my mind and love in my heart for the food but for your friendship that showed how much respect you have with each other.
You both are very articulate and left me grinin and smiling.
I'm bout to do my ribs now
Y'all is the real deal Boi!!!
    Much Love,
    Randy Chavez
    Cheers!!!
