One elderly lady I met said she had the nickname Beans because her job was to cook Lima beans at at a restaurant near me foot of the Ashley River bridge. She was talking way back in the fifties.Also there was a woman from Orangeburg that made some great Hash. Glad that John got some exposure because Hash goes way back with folks up and down the Coast. Hope he invites some of the rural school kids who may not get thus experience often.❤ 17:35

Southern food, too me is the best in the world. South Carolina is one of the top places to find that really good southern food. Everything looked wonderful. Can you choose a favorite dish out of all the dishes cooked at the cookout Mark? When I was a little girl, around 5 or 6, , mid 1950s, my family would go the fish camp on the river where the family cabins sat just up off the water. My Uncles would sit up all night cooking hash and some good drinking as they stated, for the next day's meal. Memories are the most blessed part of a life as one can look back and recall times long gone. This food looked so good Mark, the three top choices I'd pick for my plate would be, hash, collards, ribs, I missed the light bread to go with my hash but the cake was to die for to cover dessert.
Mark is the ultimate nice guy not to mention his family and film crew. I don’t think I’ve ever seen him say food “not delicious” so funny 😆 I have one question what if he said the absolute truth about his food tasting stories? Would his Chanel be as popular? My experiences in foods and cuisines around the world has not always been good or delicious! You can't be eating that fried chicken, mac n cheese, pork ribs, yams, peach gobbler and whatever else food all the time make you gain weight fast but it's the high carbs and sugar and sodium that'll make you get diabetes and high blood pressure.

I'm not a religious person, but I loved his prayer. Food comforts the soul. Its amazing what kind of difference a good meal can make to the mind. There's good BBQ across this country, but nobody takes it as seriously as the people of the South. This man has it right. I could follow him. (if I lived there)

I moved to South Carolina when I was 22 and stayed when I had to moved for work 17 years later. I really miss hash and rice with barbecue. It is a staple there.
That hash reminds me of something we call in Jacksonville/South GA "Brunswick Stew...." sort of a catch all bbq stew. And it is fantastic. Great video, man! Thanks again for showing southern style food off to the world! And compliments to chef John! The man can cook!
Hash is not at all like Brunswick stew. Cooking a how's head down and including liver. All cooked to a wonderful goodness served over rice. Kind of an evolution of liver pudding..

Great Sunday BBQ with family & friends. My mom was from SC & remember visiting relatives & this going on. She redid it in NY too...everyone came to our home, had a backyard big enough.

My late nanny taught my a recipe of ‘Texas hash’. She was handed it from some American friends and that would have been in the 1950’s. It’s tomato based (this one), minced beef, 4 cans on peeled tomatoes, bell peppers, onions Tabasco sauce, salt pepper, garlic, cumin and for this one, add rice at the end and simmer until cooked and flavoured. Serve with fresh hot garlic bread. Great winter meal.
@@iVaCay01 UberDump’s Nans Texas Hash 4 cans plumb tomatoes 1kg minced beef 2 onions chopped 2 peppers (green and red) chopped 10g of easy cook long grain rice Spices 1 teaspoon garlic or 2 cloves 2 teaspoons cumin (heaped) Salt and pepper to taste Tabasco sauce to taste Method Fry onions and peppers until soft Put aside in bowl Fry mince until browned. Drain off any excess fat. Add onions and green and red peppers to the mince and the garlic, cumin and pepper. Cook for 5 minutes Add the tomatoes one tin at a time, chopping up the whole tomatoes into pieces - fill the 1st tomato can with water, as you empty each can into the mince transfer the water into the next can, empty the last can of water into the mix. Bring to a boil then turn down to simmer. Add the Tabasco sauce to taste. Add salt to taste Add rice Put mixture into an ovenproof dish and cover with foil for a tight seal. Cook in oven at 160C for two hours at least. Best made the day before eating.

Mark this is how a backyard bbq is done. Great food, great people and everybody having a great time. My mother (RIP) was born and raised in Saint Matthews which is probably over an hour to Charleston depending on which direction you're coming from. I remember her father my grandfather would slaughter a hog once a year and my family making hash. Ours was more vinegar based. I wasn't a fan of it as a child but now that I'm all grown up maybe I might like it more. Also while you're in S.C. Mark ask about puddin' which is made with rice, spices and the chopped offals from the pig then stuffed in a casing and cooked like a sausage. I'm also not a fan of it but since you like trying exotic foods I think you might like it.
That was the best family BBQ I have ever seen, what a Guest to put on such a massive amount of delicious foods. I wish I was there! Mark and his family would have had a happy belly.

Knowing Jesus is not religion it's a relationship with Almighty God. The One who created you. The One who loves you and knows you better than you know yourself. Jesus changed my life and there is no greater love than knowing the King of kings and Lord of lords. Please trust in the person of Jesus Christ and His finished work on the cross for salvation. You thought the prayer was beautiful because God is drawing you in. He is speaking to you. And He loves you.
I'm not religious too, but I always have to thank God. Every meal is a damn gift. When you've been without food, you know how it feels!

Should have been a pig over those coals. You know damn well brisket was not around sc, let alone the lowcountry until texas bbq got in vouge about 20 years ago..
I moved to South Carolina when I was 22 and stayed when I had to moved for work 17 years later. I really miss hash and rice with barbecue. It is a staple there.

That hash reminds me of something we call in Jacksonville/South GA "Brunswick Stew...." sort of a catch all bbq stew. And it is fantastic. Great video, man! Thanks again for showing southern style food off to the world! And compliments to chef John! The man can cook!
Hash is not at all like Brunswick stew. Cooking a how's head down and including liver. All cooked to a wonderful goodness served over rice. Kind of an evolution of liver pudding..

Great Sunday BBQ with family & friends. My mom was from SC & remember visiting relatives & this going on. She redid it in NY too...everyone came to our home, had a backyard big enough.

My late nanny taught my a recipe of ‘Texas hash’.
She was handed it from some American friends and that would have been in the 1950’s.
It’s tomato based (this one), minced beef, 4 cans on peeled tomatoes, bell peppers, onions Tabasco sauce, salt pepper, garlic, cumin and for this one, add rice at the end and simmer until cooked and flavoured. Serve with fresh hot garlic bread.
Great winter meal.

UberDump’s Nans Texas Hash
4 cans plumb tomatoes
1kg minced beef
2 onions chopped
2 peppers (green and red) chopped
10g of easy cook long grain rice
Spices
1 teaspoon garlic or 2 cloves
2 teaspoons cumin (heaped)
Salt and pepper to taste
Tabasco sauce to taste
Method
Fry onions and peppers until soft
Put aside in bowl
Fry mince until browned. Drain off any excess fat.
Add onions and green and red peppers to the mince and the garlic, cumin and pepper.
Cook for 5 minutes
Add the tomatoes one tin at a time, chopping up the whole tomatoes into pieces - fill the 1st tomato can with water, as you empty each can into the mince transfer the water into the next can, empty the last can of water into the mix.
Bring to a boil then turn down to simmer.
Add the Tabasco sauce to taste.
Add salt to taste
Add rice
Put mixture into an ovenproof dish and cover with foil for a tight seal.
Cook in oven at 160C for two hours at least.
Best made the day before eating.

Mark this is how a backyard bbq is done. Great food, great people and everybody having a great time. My mother (RIP) was born and raised in Saint Matthews which is probably over an hour to Charleston depending on which direction you're coming from. I remember her father my grandfather would slaughter a hog once a year and my family making hash. Ours was more vinegar based. I wasn't a fan of it as a child but now that I'm all grown up maybe I might like it more. Also while you're in S.C. Mark ask about puddin' which is made with rice, spices and the chopped offals from the pig then stuffed in a casing and cooked like a sausage. I'm also not a fan of it but since you like trying exotic foods I think you might like it.
Hey! My wife is from Saint Matthews!!! She loves the hash, but not the puddin'. She also swears by the MUSTARD based sauce and barbecue.
That was the best family BBQ I have ever seen, what a Guest to put on such a massive amount of delicious foods. I wish I was there! Mark and his family would have had a happy belly.
