We have dry okazi here in USA how do I get the leaf soft? I soak it in warm water for 30 mins then cook down but I notice it has a hard taste like after boiling it down with chicken stew
I live in Canada and what I usually do is soak it with very hot water for 15-20mins and then I put the leaves in the middle of cooking not at the end. It helps
It’s okazi soup (the Igbo dish), not afang, eruru or any other Calabar dish. It’s like saying Chinese fried rice is rubbish and Chinese people do not know how to cook rice because Nigerians make Jollof rice.
