Ground Lamb with Marinated Halloumi and Herbs

- Because ground lamb contains a generous percentage of fat, you can smash it into a hot skillet and let it develop a nice crust without worrying about it drying out. Can’t say that about ground turkey! Good lamb is naturally earthy and a little grassy, and its flavor won’t get buried despite this big pile of fresh herbs and salty marinated cheese. If you are sensitive to even a whiff of gaminess, seek out domestic, grain-finished lamb, which is sweeter and milder than the 100 percent pasture-raised imports from New Zealand and Australia.

I raise lamb on my Homestead and have many many pounds of meat that are destined for the grinder. I know EXACTLY what I want to do with some of it!
FWIW- our lamb is 100% grass fed and it is not gamey at all! Find a local farmer, people! They can get you some GREAT stuff that is humanely raised and so much better than what you get at the grocery store!
Dill is an important part of Norwegian cuisine. It goes really well with fresh cucumber and salmon!

It's very highly used in the Middle East, especially as a breakfast food. Our Arab countries that are predominantly from the Levent. Makes sense, I guess, literally right next door to Cyprus.

I have been a dill lover since I was about 8 - we went to a 4th of July celebration at the local historical museum and there was a bake sale. Someone had made the most AMAZING dill corn bread muffins. I still think about those.
This recipe looks great - I am always down for anything with lamb and anything with halloumi, although I think I haven’t made then together before.
I also previously had a dill aversion and got over it in a pretty similar way. When I was in high school, my brother was using dried dill and the top came off, so much dill came out and it tasted so nasty. I couldn’t do dill for a long time after that, but then I had a salad that had a bunch of different kinds of tender herbs mixed in with greens. It was so good that I changed my opinion right then and there. I still don’t feel that stoked about dried dill, but I can do a little - it just tastes so strong compared to fresh.

Made this for dinner! SO good! Its now part of our regular rotation. Made homemade naan and a tomato cucumber salad.

Carla you've uploaded this just as New Zealand is coming online. I too must insist that our lamb is 10/10 and that the grass it's eating is in V picturesque settings (which surely improves the flavour?)

I'm just starting the video but had to pause to comment about the dill aversion. I love dill. but maybe it is also because I love pickles (???). I could understand people who don't like cilantro but really had no concept that people did not enjoy dill. I wouldn't say it is an epiphany but I guess it is a shock (but taste is taste, maybe genetic??? nature vs nurture??). also when stirring the marinade with the hallumi and one piece of cheese flew out, I feel the grief of losing food when stirring something vigorously or otherwise... I am really glad to see something made with hallumi bc I love cheese and have heard of it but didn't know how it was eaten (or what it shines with). also the personal dill aversion story and how you shared getting over it with your coworkers was really classic (it must be fun to work with foodies/cooks/chefs)
As someone in the UK where we had sheep’s in the fields all year round, I eat grass fed for the welfare as much as the taste. (Which is also delicious)
Yay another Brit! And yes, lamb is wonderful and a huge link when it comes to how British taste has taken to Indian cuisine so well - Rogan josh, anyone? And Easter lamb > Christmas turkey; we all know it.

Made this for my family and they went absolutely feral over it. Big big big hit.
I find dill unpleasant pretty much any time it's used with meat.
I'm Australian and eat lamb from time to time, but it isn't that regular because my father hated it and I didn't eat it growing up. Having said that, the idea of promoting grain fed lamb or beef or anything over grass fed makes me feel a bit sad.

Lambs belong, alive and well, in the fields with their mothers. Not ground up on your plate -- disgusting!
Lamb is any sheep under 1 year old. We are not stealing babies from their mothers. We are humanely harvesting them long after their moms have given them the boot.
Now, if you're talking spring lamb that's different. That would be 3months or younger. That's a whole different thing, one that I personally could not do since I raise my own.
I don't mean this to be rude, just want to get the information out there. If you're gonna eat meat, age is really just a number. For me, it's all about that animal living the best possible life up until the end. They should only have one bad day.
