- Whatever you think of when someone says fat noodles is what you should use for this delicious weeknight pasta with mushrooms. This method of cooking mushrooms-by pan-roasting them, then finishing with browned butter-is incredibly effective, whether you’re adding them to long, wide pasta ribbons or not. In the second step, the butter and aromatics wash a ton of flavor over the mushrooms, glossing them up.

Follow Your Heart Parmesan shreds are so good and melt so well with pasta or sauces, it's carried in most grocery stores these days in the vegan section, plus its cheaper than dairy cheese.

America's Test Kitchen says to pile all of the mushrooms in a dry pan on high with 1/4 water for five minutes or until the pan is almost dry again. Now add 1 teaspoon (yes tea, not table), turn the heat to medium and brown the mushrooms for five to eight minutes. This method cooks out all of the water so they don't absorb any oil and creates a wonderful lush texture.

Just because it's a fun word... Mushrooms don't have "roots," they have "hyphae!" Isn't that a fun word?? I love it.
Other cooks have said how mushrooms are a spunge before but C drives it home with the stunning visuals. I speak mushroom now. She has the coolest kitchen tools, too.
Fun tip from America's Test Kitchen... Start your mushrooms in a quarter cup of.... WATER. The mushrooms do their absorption thing, but unlike oil, water will collapse the porous structure and help draw in the salt. The mushrooms will then release their water, at which point you can add a normal amount of oil that will evenly coat the mushrooms. It went against all my culinary instincts, but it works!

The thing i love about Carla's recipies is that they can act as a base for anything, if you don't have the same ingredients that she used on this pasta dish u can absolutely use vegetables and make regular pesto with lemon and it would taste awesome, an absolute gem.
And fun fact, mushrooms aren't considered to be vegetables because they don't photosynthesize, but that doesn't make them animals because they don't move on their own and basically have nothing in common with animals, so they are part of the fungi family, they have their own world.

This was DIVINE. I'm normally interested in those rich creamy mushroom pastas, but I loved how bright this was. Herbal and lemony and just a hint of spice and super mushroom-y. I used twice the amount of mushrooms (because I always feel like they cook down disappear in recipes), so used two pans to brown them. The herb/lemon/garlic topping really takes this over the top. And that pasta shake is my new favorite!! Thank you!!

One of my favourite high rotation dinners is a sheet pan Gnocchi and Mushroom bake so they all go crispy brown in the oven and then toss through herbs and spinach. This is next level and riiiighhhhhhtttt up my alley!!!

"if you want more garlic, go ahead and add it" reminds me - apparently every recipe including garlic needs some sort of disclaimer. 60s recipe with garlic? Obviously 3-5x it, at least. 2022 recipe from renowned chef Carla? She's got it pretty good, so just do what she said. We all like garlic now, and do what you want, just don't waste your time.
